EASTERN SHORE SCALLOPED OYSTERS


1/2 cup butter

3/4 cup all-purpose flour

3 teaspoons paprika

1 teaspoon salt

1/2 teaspoon pepper

4 tablespoons chopped green pepper

4 tablespoons chopped onion

1 clove garlic, chopped

2 tablespoons lemon juice

1 tablespoon Worcestershire sauce

1 quart oysters, with liquor

1 cup cracker crumbs


Preheat onen to 350 degrees. Melt butter in skillet over medium heat. Sprinkle in flour and cook 5 minutes, or until dark brown, stirring constantly. Add paprika, salt and pepper and cook for 3 minutes.

Add green pepper, onion and garlic. Reduce heat to low and cook 5 minutes, stirring from time to time. Remove from heat and add lemon juice, Worcestershire sauce and oysters. Stir well. Pour mixture into 1-1/2 quart baking dish and sprinkle cracker crumbs over top. Bake at 350 degrees for 30 minutes.
