SCALLOPED POTATOES and HAM


6 medium white potatoes

1/3 cup all-purpose flour

2 teaspoons pepper

4 tablespoons butter or margarine

1 medium onion, chopped

3 cups milk

1/2 to 1 pound fully cooked ham, sliced


Heat oven to 350°. Lightly grease a 2-1/2 quart casserole or oven-safe bowl. Cut potatoes into 1/4-inch thick slices. Place a layer of potato slices in bottom of casserole or bowl. Add to the layer about 1/4 of the onion and ham slices, dot with butter or margerine, sprinkle with pepper and flour. Repeat, making additional layers until ingredients are used up. Pour in milk.

Bake covered for 30 minutes. Uncover and bake an additional 60-70 minutes. Let stand 5 to 10 minutes before serving.

Potatoes may be prepared either with or without skins for this recipe. Many nutrients are stored in the skins. Be sure to scrub any potato to be served with its skin.


Stewed tomatoes make a perfect side dish for this recipe.
