SAUSAGE IN BROWN GRAVY

SAUSAGE IN BROWN GRAVY


2 Lbs Smoked Sausage
1 Large Onion
1 Carrot
1/2 Cup Oil, use Olive oil if you have it
1 Cup Flour
1 Cup Catsup
1 Cup Whipping Cream
1/2 Cup Mustard
Water
1 Teaspoon Pepper
Salt to taste
1 Teaspoon Nutmeg
1 Teaspoon Oregano

Dice the onion and carrot, cut the sausage in 2 inch pieces. In a pot, over medium heat, combine the oil
and flour, stir until brown. Then add water, until gravy gets consistency of whipping cream. Bring up to
a boil, and add more water if the gravy gets to thick.
Add the catsup, mustard, whipping cream, spices and salt. Let simmer for 10 minutes, then add the carrot
and onion. Simmer for another 10 minutes, then add the sausage. After another 10 minutes it's ready to be
served.
Serve with your choice of mashed potato, boiled potato or rice. Sweet peas are delicious with this dish. Serves 4.
