KJELLAUG's POTAOE PUDDING

KJELLAUG's POTATOE PUDDING
8 Large Potatoes, about 3 Lbs
4 Tablespoons Potatoe flour (starch)
2 Tablespoons Flour
3 Eggs
2 Sticks of Butter, 8 oz
Bacon
Rutabaga
Peel the potaoes, and grind them in a meat grinder. Melt 1 1/2 stick of butter, and mix
potatoes, melted butter, potato flour, flour and eggs.
Pour the mixture in a 13 x 9 inch pan, top it with the remaining 1/2 stick of butter, and
bake, in a pre-heated, 450 degree, oven for about 50 minutes, until the top gets brown
and crispy.
Serve with bacon, that you fry in a pan until crisp, and boiled rutabaga.
This dish serves 4, use as much bacon and rutabaga as you like, but I
recomend lots of bacon.
This is one of my favorite dishes, and the recipe is from my sister Kjellaug.
