SPATZLE

3 eggs; 2/3c. milk; 1/4tsp. salt; 1/4tsp. nutmeg, ground; 1/4tsp. white pepper; 8oz. flour; 2qt. chicken stock, hot; 4oz. butter
In a large bowl mix together the eggs, milk, salt, nutmeg, and pepper. Add the flour and beat until smooth. Let batter stand for 1 hour before cooking. Spray the inside of a large colander with some spray oil. Place this colander over a pot of simmering chicken stock and force the batter through the holes. Poach for about 2 to 3 minutes. Remove from poaching liquid and allow to drain. Saute each portion as needed in butter till lightly brown. SERVES=8
