POTATO PANCAKES

2lb. potatoes, peeled; 8 eggs; 6oz. onions, grated fine; 16oz. flour; salt; pepper
In a large bowl mix the onions, flour, eggs, and salt (to taste). Grate the potatoes and press out all the water by squeezing out the water with your hands (This is very important!) Add the grated potatoes to the batter and mix well. Preheat a skilled. Add bacon fat or oil and allow to get very hot. Add about 1/3c. of the batter and fry over medium heat for about 2 minutes on each side. SERVINGS-10
