SWEET POTATO PATTIES

15lb. sweet potatoes, wash and dried; 8oz. butter; 8oz. sugar; 2tbsp. cinnamon; 1 1/2lb. coconut, shredded; salt and pepper to taste; butter to cook in
Bake the sweet potatoes in a 350° oven till very tender. Scoop out the pulp and pass through a food mill or mash with mixer. Bland all ingredients except the coconut with the sweet potato pulp. Place into freezer till firm. Using a scoop, scoop out portions and make flat into patties. Roll each into the coconut and place into cooler. To cook, melt whole butter over medium heat and pan fry till golden brown on both sides. SERVINGS: 50
