SALMON CHAR BROILED
10lb. salmon, fillet into 6oz. portions; 1lb. whole butter; 1lb. brown sugar; 1/2c. lemon juice; 2tbsp. dill; 1tbsp. red pepper flakes; olive oil; salt; pepper
Using a saute pan, melt the butter along with the brown sugar, lemon juice, dill and peppers. Mix well. This will be the glaze for the fish. Season each fillet with a little salt and pepper and coat lightly with olive oil. Broil over medium high heat till just tender. Last 2 minutes of cooking baste the fillets with the brown sugar butter mixture. SERVES 25
