SNAPPER WITH TEQUILA LIME VINEGARETTE
Vinegarette for 10 (2oz. vinegar, rice wine; 1oz. oil; 1oz. lime juice; 1oz. tequila; 2tbsp. chopped cilantro); 2oz. concasse (peeled, seeded, and chopped coarsely) tomato finely diced; salt; pepper; 5-7oz. snapper skinned; 3 pieces grapefruit; 3 slices avocado
Mix ingredients for vinegarette. Coat snapper with vinegarette mixture. Broil till done. Serve with grapefruit and avocado.
