Geno's Sauce Recipe:
(1) Red Onion
(1) Bag of Carrots
10) Roma Tomatoes
Fresh Garlic
Extra Virgin Olive Oil
White Cooking Wine
Basil
Oregano
Rosemary
(You can substitute Italian herb mix for basil, oregano and rosemary.)
Directions:
Dice tomatoes, chop carrots and finely chop onion. Heat Olive
Oil in a pan. Add Garlic, white cooking wine, carrots and onion. Add lots of
herbs. Sautee all. Add 1 can of Tomato Paste. Add tomatoes during last 5
minutes of sautee. Puree in a food processor and put back in pan and simmer.
Salt and season to taste.
