Zucchini Casserole... by Michele in California

1 onion chopped
1 bell pepper chopped
2 eggs-beaten
2 cups seasoned bread crumbs
1/2 cup grated cheddar cheese
1/4 cup oil
4 or 5 grated zucchini

Saute onion and bell pepper in oil--do not brown! Mix all above together. Spoon in pyrex dish sprayed with Pam. Bake 45 min. at 350 degrees.

Broccoli Casserole by...Elizabeth in California

2 pkgs frozen broccoli pieces
1 cup uncooked rice (cooked according to directions on pkg.)
1 cup diced onions
1 cup diced celery
2 cans cream of mushroom soup
1 - 16 oz. jar of cheez-whiz (lowfat cheez-whiz ok, too!)
salt & pepper to taste

Cook rice. Saute' onion and celery in margarine. Partially cook frozen broccoli. Mix all together, adding the rest of the ingredients. Pour into 9x13 casserole dish. Top with crushed crackers, or saute'd bread crumbs. Bake in uncovered dish for 50 min. at 325 degrees. Let cool for 10 minutes before serving. Delicious!!!

Classic Baked Pasta Casserole (Baked Ziti) by Watchlady

1 lb pkg Ziti or Rotini uncooked
1 lb ground beef, cooked and drained
2 - 26 oz jars spaghetti sauce
4 cups (1 lb) shredded mozzarella cheese

Preheat oven to 350 degrees. Prepare pasta as package directs. In large bowl, combines pasta, beef, spaghetti sauce and 2 cups cheese. Mix well. Turn into greased 13 x 9 inch baking dish; cover. Bake 45 minutes or until hot and bubbly. Uncover; top with remaining 2 cups cheese. Bake 10 minutes longer or until cheese melts. Refrigerate leftovers.

Spaghetti Pizza Pie (from Kraft Kitchens)

8 oz spaghetti, cooked, drained
1/2 cup Kraft 100% Grated Parmesan Cheese
1 egg, lightly beaten
1 lb. ground beef, cooked, drained
2 cups spaghetti sauce
1 pgk - 8 oz- Kraft Shredded Mozzarella Cheese

TOSS cooked spaghetti, Parmesan cheese and egg. Place in 9" pie plate. Press along bottom and sides to form crust.
MIX cooked meat and spaghetti sauce. Spread meat mixture over spaghetti crust. Sprinkle with mozzarella cheese.
BAKE at 350* F for 30 minutes or until thoroughly heated. Let stand 5 minutes before cutting into wedges. Makes 8 servings.
I doubled the recipe and put it in a 9 x 13 pan.

Serves 8 to 10
Feel free to vary fat-free or low fat for the sour cream, half fat mushroom soup and/or margarine for butter. Also, experiment with whatever cheeses you like. This freezes well and is great for buffets.
2 lb frozen hash browns
1 pint sour cream
2 cans cream of mushroom soup
1/2 cup melted butter
grated onion & salt to taste
2 cups grated cheddar cheese
parmesan cheese (for topping)

1 Thaw potatoes slightly for easier mixing.
2 Mix first six ingredients in a 9"x 13" baking dish.
3 Sprinkle parmesan cheese on top.
4 Bake at 350 F for 1 to 1-1/2 hours.

Pizza Casserole...by Watchlady

3 cans tomato soup
12 oz pkg noodles
12 oz cheddar cheese

Cook noodles, drain. Mix all ingredients, saving a little cheese for the top for the last 15 min. Put in a covered casserole dish.
Bake at 350* for 1 hour.

Onion-Chicken Stuffing Bake (Quick Cooking Magazine)

1 pkg (6 oz) seasoned stuffing mix
3 cups cubed cooked chicken
1 can (10-3/4 oz) condensed cream of chicken soup, undiluted
1 cup (8 oz) sour cream
2 tablespoons onion soup mix
1 can (4 oz) mushroom stems & pieces, drained
1 can (8 oz) sliced water chestnuts, drained
1/4 cup grated Parmesan cheese

Prepare stuffing mix according to package directions; set aside. Place chicken in a greased 2 qt. baking dish. Combine the soup, sour cream and soup mix; spread over the chicken.
Sprinkle with mushrooms and water chestnuts. Spread stuffing over top. Sprinkle with parmesan cheese. Bake, uncovered at 350* for 30-35 minutes or until bubbly.
Yield: 6-8 servings

Texas Hash

1-1/2 lbs. extra-lean ground beef
3 tblsp oleo
2 large onions, sliced
2 green peppers, cored, cut fine
2 cups canned, diced tomatoes with juice
1/2 cup uncooked rice
1 tsp. chili powder
2 tsp salt
1/4 tsp pepper

Brown meat with oleo, add onions and pepper. Cook until mixture falls apart. Add tomatoes with juice, rice and seasonings. Mix well. Put in a large, uncovered casserole dish. Bake 45 minutes, or until rice is cooked through. Makes 8 servings.

Beef Noodle Casserole

1 large onion, chopped
1 small green pepper, chopped
3-4 stalks celery, chopped
2 tblsp margarine
1 lb. extra lean ground beef
1 can (4 oz) mushrooms, optional
1 tsp seasoned salt
1/4 tsp pepper
1 can (8 oz) tomato sauce
1 can (6 oz) tomato paste
4 oz. noodles, cooked (1-3/4 to 2 cups, cooked)
4 oz. cheddar cheese, shredded (1 cup)

Saute first 3 ingredients in oleo for 2 - 3 minutes, or until tender. Add ground beef and saute, stirring until meat loses its red color. Add mushroom. Mix seasonings, 1/3 cup water, and next 2 ingredients. Stir into meat mixture and heat well.
Add noodles, mix well, and put in a 2 qt. casserole. Sprinkle with shredded cheese and bake at 350* about 30 minutes.

Tator Tot Casserole

1 lb. extra lean ground beef
1 can green beans, drained
1 can cream mushroom soup
1/2 can milk (use the soup can)
4 oz. Velveeta cheese, cut into small cubes
1 lb. tater tots, thawed
3 oz. shredded cheddar cheese, optional

Brown meat. Drain well. Blend soup and milk together. Combine meat, beans, cheese, tater tots. Pour soup mixture over all ingredients. Bake covered for 30 minutes at 350*. Uncover. If desired, sprinkle the shredded cheddar cheese over the top. Bake uncovered for 20 minutes longer

Our Favorite Lasagna! by Judy L in Wisconsin

1 lb. extra lean ground beef
10 oz lasagna noodles (8 pcs)
1/4 tsp garlic powder
2 - 12 oz large curd cream style cottage cheese
1 tblsp parsley
2 beaten eggs
1 tblsp basil
2 tsp salt
1 tsp sugar
1/2 tsp pepper
1-1/2 tsp salt
2 tblsp parsley
1 #1 can tomatoes (2 cups)
1/2 cup Parmesian cheese
2 6 oz cans tomato paste
1 lb. Mozzarella cheese (or 4 cups shredded)

Brown meat slowly. Spoon excess fat. Add next 7 ingredients to meat. Simmer uncovered until thick....stirring occasionally. Cook noodles in boiling water until tender. Drain. Rinse in cold water.
Combine cottage cheese with next 5 ingredients. Place 1/2 noodles in 13 by 9 by 2 inch pan. Spread 1/2 cottage cheese mixture over the noodles. Add 1/2 of the mozzarella chese over this mixture, and then 1/2 of the meat sauce. Repeat the layers.
Bake at 375* for 30 minutes. Let stand 10 to 15 minutes before cutting.

Cheesey Broccoli Casserole by watchlady

1 pkg (6 oz) Stove Top stuffing mix for chicken
2 pkg (10 oz each) frozen broccoli florets, thawed, drained
1 can (10 3/4 oz) condensed cream of mushroom soup
1 cup Cheez Whiz Cheese Dip

PREHEAT oven to 350*. Prepare stuffing mix as directed on package, using only 3 Tbsp. butter. Set aside
MIX remaining ingredients in 2 qt. baking dish; top with stuffing.
BAKE 30 min or until heated through.
Makes 8 servings, 3/4 cup each.
