Pumpkin Roll
3 eggs
2/3 cup pumpkin
1 cup sugar
1 teaspoon baking soda
1 teaspoon cinnamon
3/4 cup all-purpose flour
1/2 cup chopped nuts (more if desired)
1 teaspoon lemon juice
Grease a 10" x 15 1/2" cookie sheet,
place wax paper on bottom of pan and grease again.
Mix all ingredients and pour into prepared pan.
Sprinkle with nuts.
Bake in a 375 degree oven for 15 minutes.
Turn onto a flat towel well sugared with confectioners sugar.
(Do not use terry cloth towel)
Immediately roll up, towel and all.
Let cool completely.
Unroll and spread with filling and refrigerate. (freezes well)
Filling:
2 tablespoons butter or margarine
8 oz. cream cheese
3/4 teaspoon vanilla
1 cup confectioners sugar
Mix all ingredients until well blended.
