MEXICAN SURPRISE
A psuedo Mexican dish that reminds
me of an inside-out taco
INGREDIENTS
1
Spanish Onion, chopped
1 lb. Hamburger
(or 1/2 lb hamburger, 1/2 lb ground sausage)
1 can Kidney Beans,
drained and rinsed
1 can Pinto Beans,
drained and rinsed
1 lg can Tomato Paste
1 sm can Tomato Paste
1 lg can Tomato Sauce
1 sm can Tomato Sauce
2 tbs Worcestorshire
Sauce
4 tbs Prepared
mustard
Chili powder and hot sauce to taste
1 bag Large corn
chips
In a buttered pan, sweat the chopped onion. When translucent,
add the hamburger and brown. Pour off excess fat. Add kidney
beans, pinto beans, tomat paste, tomatosauce, worcestorshire sauce, mustard,
chili powder and hot sauce. If you like it extra hot, add a chopped
jalepeno pepper or two. Cover pan and simmer, stirring occasionally.
When done, create a buffet. First, cover your plate with corn
chips. Then add gobs of the meat sauce. Finally, cover with
your choice of garnishes from the list below.
GARNISHES
Shredded Extra-sharp cheddar cheese.
Shredded lettuce.
Sliced black olives.
Chopped scallions.
Toothpaste. No. Wait. Maybe not.
Chopped Jalepeno or Habanero peppers.
Your favorite hot sauce.
A good side dish, especially for an extra-spicy batch, is refried beans.
