Already missing that food from home? Having troubles in your Japanese kitchen? No worries! try making a cake in your suihanki (rice cooker)! It's as easy as 1-2-3!

Banana Cake

Ingredients:

   
1½ cups (3 sticks) butter 4 cups flour
1¾ cups (packed) brown sugar 1 t salt
4 eggs ½ t baking soda
3 t vanilla extract 1 T baking powder
1 t orange rind (optional) 2 t cinnamon
½ t nutmeg ¼ cup lemon juice
2 cups puréed ripe banana combined
Note: if you use your rice cooker, much less butter or oil is needed.


Directions:

  1. Preheat oven to 190°C (350°F). Grease a loaf pan or paper loaf pan. (Found at ¥100-ya. If using your rice cooker, this is not necessary.)
  2. Beat together butter and sugar in a large bowl. Add eggs, one at a time, beating well after each. When the mixture is fluffy, stir in the vanilla and orange rind.
  3. Sift together the dry ingredients. Add this to the butter mixture alternately with the bananas, beginning and ending with the dry mixture. Mix just enough after each addition to combine-don't overmix.
  4. Spread the batter evenly in the pan or rice cooker (not too high because it will rise,) and bake 40-50 minutes-or until a toothpick comes out clean. Let cool for 10 minutes and then remove and let cool on a rack. (If using a rice cooker, you may need to flip over once. No timing is necessary. Just press the "start" button on the cooker.)
