Well, first, let's consider a definition.  I'll check dictionary.com:

Roast:       (rOst)
v. roast·ed, roast·ing, roasts
v. tr.

bullet

To cook with dry heat, as in an oven or near hot coals.

To dry, brown, or parch by exposing to heat.

bullet

To expose to great or excessive heat.

bullet

Metallurgy. To heat (ores) in a furnace in order to dehydrate, purify, or oxidize before smelting.

Informal.

  1. To ridicule or criticize harshly.

  2. To honor at or subject to a roast.

I'll go with the informal one.

Roasting someone is just what you do with friends.  It is just done in a formal setting.  Usually it is done by celebrities and those who have lots of friends, or by celebrities who have lots of celebrity friends.  In my case, its done on the loser level with a few measely friends who came for the free pop.

It should be a form of flattery.  These are not built for people who can't take criticism easily.  They are built for cerebral people who not only love to give constructive criticism, but like to take it.  Then again, it's not always constructive.  (i.e.

Is she planning on hibernating?

It looks like she wrestled sasquatch with a coat of crazy glue on her arms.)

Either way, you need thicker skin and more importantly-  a sense of humor.

The most notable roasts are those done by The Friars Club.  They can frequently be seen on Comedy Central.  Some of the most notable roasts have been recently done for Richard Pryor, Dennis Leary and Hugh Hefner.  If you have never caught one of these I suggest you do. 

Roasts are truly original masterpieces.  They combine original insight, comic wit, a good sport, a funny atmosphere, and organization all into one formal setting.  In many instances- anything can happen.  It's a live show baby.

To this date I have done three roasts.  I have spoke, been the keynote speaker, and the roastmaster.  I suppose I'll define these roles for the retards out there (not that there is anything wrong with that):

The roasted:           The person being celebrated.  The main person being made fun of.  However, at a roast, they are not the only person that should be made fun of.  They usually speak last and give a rebuttal for all the brutality that goes on through the night.

Roastmaster:         The host of the Roast.  They're function is to keep everything going smoothly.  They determine much of the atmosphere.  A good roastmaster will make fun of all the speakers and introduce them.

Keynote speaker:  In terms of baseball.  He is the saver.  He is the main event.  The biggest laughs are usually from this person.  They attack "the roasted" (see above) brutally.
