Czech Republic

Despite what you may think, this is no longer Czechoslovakia. They split into two countries back in '93. It's a nice (if somewhat poor) little country. However, the people are fairly nice, the food is good and cheap (try the fried cheese), and they haven't modernized as much as the rest of Europe. Because most of it was spared during World War II, Prague and the restof the Czech Republic is a a hidden oasis of the old world. Sur,e they're coming into the 21st century, but you wouldn't know it if you were there.
