Garlic Steak and Vegetable Stir Fry
1 lb. lean sirloin steak or tenderloin
1 teaspoon salt
1/4 teaspoon black pepper
4 Tablespoons roasted garlic flavor crisco oil
2 cups bite sized fresh mixed vegetables
(Broccoli, carrots, celery, etc.)
1 cups sliced fresh mushrooms
Slice steak, across the grain, into small strips
(1 x 1/4).
Season steak with the salt and pepper.
Heat 3 Tablespoons of the oil in a heavy skillet or wok.
Add steak and cook, stirring, over med.-high
Heat to desired doneness.
Remove with slotted
spoon to a side dish.
Add remaining 1 Tablespoons oil to the pan.
Heat oil and
stir in mixed vegetables and mushroom.
Cook
stirring for about 5 min or until vegetables are
crisp-tender.
Return steak back to pan and stir together.
Serve with rice or noodles.
Countryside Chicken
1 cup uncooked rice
1 can cream of mushroom soup
1 cup sliced celery
3/4 onion, chopped
3/4 cup mayonnaise
2 teaspoons parsley flakes
1/2 teaspoon salt
1 1/4 cups water
1/8 teaspoon pepper
6 chicken breast filets
Place rice in baking dish. Combine celery, onion, parsley, salt and
pepper in bowl mix well. Spoon over rice. Combine soup and
mayonnaise in bowl.
Add water; mix well. Pour half the soup mixture
over the vegetable mixture.
Arrange chicken on top. Pour remaining
soup mixture over chicken.
Bake at 350 degrees for 1 hour.
Chicken and Rice
1 stick butter
1can cream of celery soup
1 cup water
1 cup uncooked rice
1 can cream of mushroom soup
dash of salt
1 can of cream of chicken soup
3 chicken breasts
Melt butter. Combine with all ingredients, except chicken in a
casserole dish. Place chicken on top. Cook at 350 degrees for 1 1/2 hours.
Swiss Chicken
4 whole boneless chicken breast
8 slices swiss cheese
5 tablespoons butter (melted)
2 tablespoon flour
1/2 cup milk
1/2 cup chicken broth
1 box stove top stuffing mix
Place chicken breast in a buttered dish. Cover each breast
with one
slice of swiss cheese. In a small saucepan, mix
2 tablespoons butter with
flour.
Blend over low heat until smooth and bubbly. Slowly stir
in milk
and broth,season with salt and pepper.
Prepare stuffing mix according
to directions on box.
Combine stuffing mix with remaining 3
tablespoons of butter.
Spread over top of chicken.
Bake at 350 degrees
for 45- 60 minutes
Honey Baked Chicken
3 pounds chicken pieces
4 Tablespoons olive oil
1/4 cup mustard
1 teaspoon salt
1/2 teaspoon curry powder
1/2 cup honey
Wash and dry chicken. Skins can be removed
.
Place oil in a shallow
baking pan. Add remaining ingredients.
Roll chicken in mixture then
arrange in single layer in same pan.
Bake at 375, basting occasionally
for 40 min. (30 min if using boneless breast)
Garlic Chicken with Linguine
1 pkg. chicken cutlets
2 Tablespoons oil
1 stick butter
1/2 pound mushrooms
1 green pepper
1 pkg. frozen chopped brocolli
salt and pepper to taste
garlic powder to taste
1 lb pkg linguine
Grated parmesean cheese (if desired)
Cut chicken into pieces. Stir fry in oil. When chicken is cooked, add
margarine, peppers, mushrooms, salt, pepper and garlic pepper.
Cover
and simmer for 20 min. After 20 min, add brocolli and cook till done.
Serve chicken mixture over linguine.
Beef Spaghetti Pie Ole
1 lb lean ground beef
1 tsp garlic powder
1/2 tsp salt
1/2 tsp ground cumin
1 can (10 oz) diced tomatoes with green chile
3/4 c light dairy sour cream
1 c shredded Monterey Jack or Cheddar cheese
Pasta Shell:
1 pkg (7oz) uncooked spaghetti
1/3 c shredded Monterey Jack or Cheddar cheese
1 egg
1/2 tsp salt
1/4 tsp garlic powder
1. Heat oven to 350.Cook pasta according
to
package directions; drain.Whisk together
remaining pasta shell ingredients.
Add
pasta; toss.Arrange in 9" pie dish,
pressing to form shell.
2. Heat large skillet over medium heat until
hot.
Add ground beef; brown 4 to 5 minutes,
breaking up into
3/4" crumbles. Pour off
drippings. Season with garlic powder,
salt
and cumin; stir in tomatoes. Bring to
a
boil; cook 3 to 5 minutes or
until liquid is
almost evaporated, stirring occasionally.
3. Reserve 2 Tbsp beef mixture for garnish;
Stir sour cream into remaining beef;
spoon
into pasta shell. Place 1 cup cheese in
center, leaving 2" border around edge.
Spoon reserved beef mixture
onto center of
cheese; bake 15 minutes
or until heated
through. 4 servings
Simple Salisbury Steak
1can cream of mushroom soup
1 pound ground beef
1 egg, beaten
1 1/2 cup sliced mushrooms
1/3 cup dry bread crumbs
1/4 cup finely chopped onion
In a bowl, mix 1/4 cup soup, ground beef,
bread crumbs, egg, and
onion, Shape firmly into patties.
In a skillet over medium- high heat, cook patties
a few at a time, until
browned on both sides.
Spoon off fat. Stir in remaining soup and
mushrooms.
Return patties to skillet. Reduce heat to low. Cover and
simmer 20 minutes or until done, turning patties occasionally.
