When we were in Cuzco, we stayed at the Orquidea Real Hostal. It's just up the stairs in the middle of the picture above. They are just like what you'd expect from an American "bed and breakfast". They give you extremely friendly service and make sure you get everything you want out of your tour to the Inca empire.
The rooms are cozy, each with a fireplace and thick (we're talking 2" thick) alpaca wool blankets to keep you warm. Daily breakfast consists of flatbread, jam, butter, and coffee or coca tea. Another lucky surprise was cable TV with HBO and Showtime in English. Be prepared to go to bed early--most tours start at 6:30 or 7:30 in the morning.
The staff at Orquidea Real Hostal are terrific at making your travel plans. They tracked our plane flights to Puerto Maldonado, and arranged all of our tours in town while we were there. They met us at the airport when we flew in, and they picked us up at the train station when we got back from Machu Picchu. They ask you what tours you want to take, collect the money (dollars okay) from you, and hand you all the tickets you need each day before you take a tour. And the sack lunch they prepare for the Machu Picchu trip is huge!
And if you're concerned about security--Orquidea Real Hostal has a security guard on the job 24 hours a day, 7 days a week. These guards are very friendly and give you a nice safe feeling during your stay. Our guard even hailed a cab for us to get to the airport and negotiated a good rate!

By the way, Orquidea is pronounced "or-KEE-dee-yah" and means orchid in Spanish.
