Zepher's Drinks
Nettle Beer
Only young nettles should be used in this one.
Take 2 gallons of them and wash them well and put in a
large pan with 2 gallons of water, and ½ oz of
crushed ginger root, 4 pounds
of malt, 2 ozs of hops, and 4 ozs of sasaparilla.
Boil for 15 min and strain over 1 pound of sugar.
Stir till sugar is dissolved, then add 1 oz of creamed yeast.
When it starts to ferment, put it into bottles and make sure
you tie down the corks to the bottles. Use it when u are ready.
Sack Mead
( a little harder to make but well worth it, trust me )
You will need:
a old wood barrel
a small wood barrel
something like a old mason jar with lid to make a good seal
Take 5 ½ pounds of good local honey to ever gallon of water warm you wish to use.
( this sack mead takes a while to make it, so make enough to last you for a while )
Mix the warm water and the 5 ½ pounds of honey per gallon together. Mix until honey id dissolved.
Go to a local wine store and obtain some yeast. Put the yeast in a small glass and a small amounts
of honey water over a few weeks until it starts to ferment. Keep it at about 60f. Also keep the honey
water mixture at about 70f. Once yeast has fermented, add it to the honey water mixture. Cover in the
barrel with a loose cloth so that no bugs or dust will enter it. In about a week the honey water, yeast
mixture should start fermenting and at the end of a month it should stop. At this time strain the
mixture very carefully and put all the waste to the side. When done close the barrel of tightly where
no air will enter. It will only be opened every so often to be toped off.
( remember, if it goes bad it will be like vinegar.)
The barrels and mason jar being used needs to be very clean to ensure no vinegration.
Now you let it sit for 2 to 3 years, yes I mean years, before it is ready. Put some of the mixture off to
the side in the other barrel so you can use it to top it off as the mixture slowly evaporates. Make sure the
barrel is always full and there is no air in it. All 3 containers must be full, that way you have enough to keep
the barrels full. Use the big barrel to mix the honey, water, yeast in and let ferment for 1 month. Use the
jar to keep the smaller barrel full over the 2 to 3 years.
Cowslip Wine
Boil two pounds of white sugar with five quarts of water and,
while boiling, pour over a quart of yellow part of fresh cowslip flowers.
Leave for 24 hrs then strain and add 2 table
spoonful of yeast that has been spread out on a piece of toast.
Leave, covered for 10 days, stirring 2 to 3 times each day for
the first 4 days. Then strain and bottle.
Bee Wine
Into a syrup solution of 2 tablespoons of sugar to a pint of water,
put a very small pinch of tartaric acid and a piece of yeast the size
of a dime. Start it off at blood heat and stand the glass jar in a
warm room near the window and leave it to work. In a day or so the
yeast will begin to grow and collect bubbles so that the lump floats
up and down. Fermentation will proceed until the liquid is converted
into a sweet wine, which you may flavor by adding fruit juice. Do not
let it sit to long or it will have a very bad taste and smell.
Honey Beer
Take 1 oz of ginger boil it with a gallon of water for 30 min. Then
add it to a pound of white sugar in a pan with 2 oz of lime juice,
4 oz of honey that has been ran clear, juice of 3 lemons and
another ½ gallon of cold water. When the mixture is luke warm, add a
large teaspoon of yeast that has been spread on a piece of toast.
Leave for 12 hrs and then strain through cheese cloth. After a hour
or 2, put it in a bottle ( carefully ).
Mead
Put 4 pounds of honey in a gallon of water and add
1 oz of hops, ½ oz of ginger root and the rind of 2 lemons.
Boil this for 45 min then pour it into a container with it still
luke warm. Then add 1 oz of yeast. Leave it to ferment then
bound container tight. In 6 months
it will be ready. But very much worth the wait.
