Since I became vegetarian I've been acquiring various recipes from many sources. These are my favorites. Most are easy and cheap. All are good.
A note about eggs:In ANY recipe, you can replace eggs with 1/4 cup applesauce per egg (in baking) or 1 tablespoon flax seeds + 1 cup of water in a blender until gloopy (for battering, etc) or you can leave eggs out and see what little difference it makes! Try tofu scrambled with spices (ready made from the store or experiment yourself), or baked to replace scrambled eggs and omelets (mix 1/2lb tofu with 1/2 cup soymilk and a little onion, bake at 400 degrees in pie plate for 1/2 hour and top with sauteed mushrooms, peppers, tomatoes etc).
Products like Egg Beaters are NOT egg replacers. They are made with egg whites, and if you are using them you are actually consuming MORE eggs than if you just used whole eggs.
