• 1 lg can white meat chicken
• 1 can black beans
• 1 can Rotel tomatoes, drained
• 1 tsp. cumin
• shredded cheese
• flour tortillas

In a medium bowl, combine all ingredients minus the cheese and tortillas. Heat griddle on medium-high heat. Place one tortilla on griddle, spoon on chicken filling (as much as you want) sprinkle cheese on top of filling, and place another tortilla on top. Cook until tortilla starts to get crisp, and then flip over and cook until that side gets crisp also.

Serve warm, with sour cream, salsa, or anything else as garnish.
