Another good one, in time for St Patricks Day...LOL!!!
(Recipe was compliments of S.O.A.R. Ethnic Archive,
Though SOAR has moved and I haven't found it yet..lol!!

Traditional Irish Stew

3 lbs.boneless lamb shoulder, trimmed and cut into 1 inch pieces
1 1/2 tbls minced fresh parsley leaves
1 tsp dried thyme
6 cups chicken broth
3 lbs potatoes, peeled and quartered
1 large onion, finely chopped
1 lb carrots, peeled and cut into 1/2 inch pieces
6 stalks celery, trimmed, cut into 1/2 inch pieces
6 tbls flour
1/4 cup Vegetable oil
Salt and pepper to taste

In a 7 or 8 quart kettle, simmer lamb, parsely, thyme,
salt and pepper to taste in 4 cups broth, covered for 1 1/2 hours.
Add potatoes, onion, carrots, celery and remaining broth and simmer, covered 1 hour.
In a small bowl, whisk together flour and oil until smooth and stir into simmering stew.
Continue to simmer a few more minutes until thick as desired.
Season with more salt and pepper!
