Drozdova Polevka Se Zeleninou
(Fried Yeast Soup with Vegetables)

INGREDIENTS:

tablespoons

Virgin
olive oil
|
2
tablespoons
|
Flour
|
1
oz
|
Leek
- diced
|
¾
- 1 pint
|
Water
|
1
oz
|
Yeast
- fresh
|
1
|
Egg
yolk
|
1
oz
|
Kale
- diced
|
1
oz
|
Cauliflower
- diced
|
2
oz
|
Onion
- chopped
|
|
Salt
& Pepper
|
|

METHOD:
|
|
|
Add
crumbled yeast cake and onion to oil and very gently fry.
Take care not to burn yeast.
|
|
|
When
yeast begins to melt, sprinkle with flour, fry for a while,
add water, beat and boil for about 20 minutes.
|
|
|
Add
vegetables, simmer until vegetables are tender.
|
|
|
Finally
beat egg yolk into the soup and sprinkle with parsley.
|
|

The type of vegetables can be altered, but remember to add
vegetables that take longer to cook first.

In a hurry you can use diced frozen vegetables.
