You can make endless versions of this soup. It is also inexpensive if you use what is in season.
 

Drozdova Polevka Se Zeleninou
(Fried Yeast Soup with Vegetables)

INGREDIENTS:

2 tablespoons

Virgin olive oil

2 tablespoons

Flour

1 oz

Leek - diced

¾ - 1 pint

Water

1 oz

Yeast - fresh

1

Egg yolk

1 oz

Kale - diced

1 oz

Cauliflower - diced

2 oz

Onion - chopped

Salt & Pepper

Kale is good for you - rich in vitamins and fibre

METHOD:

Add crumbled yeast cake and onion to oil and very gently fry. Take care not to burn yeast.

When yeast begins to melt, sprinkle with flour, fry for a while, add water, beat and boil for about 20 minutes.

Add vegetables, simmer until vegetables are tender.

Finally beat egg yolk into the soup and sprinkle with parsley.

     
 

 

TIPS:

The type of vegetables can be altered, but remember to add vegetables that take longer to cook first.

In a hurry you can use diced frozen vegetables.
