Directions:
Boil 1 1/2 to 2 handfuls of spaghetti noodles while making the sauce.
Brown ground beef in a medium to large frying pan. Add mushrooms and tomato soup. Add onion powder, garlic powder, and pepper. Let simmer until noodles are done (you may need to add a little water if it seems to be getting dry).
Serves 2-4. Serve with garlic bread if desired.

Ingredients:
1 lb. gound beef
1 32-oz. jar spaghetti sauce
1 1/2 c. cottage cheese
1 egg
1/2 c. water
pepper to taste
10 uncooked lasagna noodles
2-3 c. mozzarella cheese
Brown ground beef. Stir in sauce and water. Mix together cottage cheese, egg, and pepper.
In a 12x9 glass pan, spread 1/2 c. sauce. Then layer noodles, cottage cheese, mozzarella cheese, and sauce. Repeat.
Cover with plastic wrap and microwave on high for 8 minutes and then on medium low for 32 minutes.

Ingredients:
1 C. (2 sticks) margarine or butter, softened
1/2 C. shortening
3 C. sugar
5 eggs
3 C. flour
1/4 tsp. baking powder
1/4 tsp. salt
1/2 C. cocoa
1 1/3 C. milk (optional: 1 C. milk and 1/3 C. Kahlua)
1 T. vanilla
Cream margarine, shortening, and sugar. Add eggs one at a time, beat until smooth. Mix flour, baking powder, salt, and cocoa. Alternate adding dry mixture with the milk. Add vanilla. Pour into tube pan.
Bake in 325 degree oven for 1 hour and 45 minutes (or until cake tests done).
Feel free to add to the recipe. (An example would be 1/2 C. chopped black walnuts.)

Ingredients:
1/2 C. sugar
1/2 C. brown sugar
1/2 C. flour
1/2 C. oatmeal
1 tsp. cinnamon
1/2 tsp. nutmeg
1/4 C. oleo
6 C. Apples (peeled & sliced)
8 inch round cake pan
In medium bowl, combine sugars, flour, oatmeal, cinnamon, and nutmeg. Cut in oleo until mixture resembles coarse crumbs.
Set aside. Butter baking pan. Place apples in pan. Sprinkle with topping mixture.
Microwave, uncovered, on High for 14-16 minutes or until apples are tender. Serve warm with ice cream or cream. Serves 6.
For 3 servings, use half the amount of all the ingredients and bake in a 7 inch pie plate for 7-8 minutes on High.

Ingredients:
1 1/2 C. cooked rice
2 C. milk (divided into 1 1/2 C. and 1/2 C.)
1/3 C. sugar
1/4 tsp. salt
1 egg, beaten
1 T. oleo
1/2 tsp. vanilla
2/3 C. raisins (optional)
Combine rice, 1 1/2 C. milk, sugar, and salt in heavy pan. Cook over medium heat, stirring occasionally, until thick and creamy (about 15-20 minutes).
Blend remaining 1/2 C. milk and egg. Stir into rice mixture. Add raisins (optional). Cook 2 minutes longer, stirring constantly. Add oleo and vanilla.
Sprinkle cinnamon or nutmeg on top before eating, if desired.
Ingredients:
1 can evaporated milk
1 can hot water (the milk plus the water equals about 3 C.)
1 C. mashed potatoes
1 C. oleo
1 C. sugar
3 eggs
1 1/2 tsp. salt
2 pkg. dry yeast
7 or 8 C. flour (maybe more)
Combine ingredients and mix with electric mixer at medium speed. Add only 2 C. flour at first and mix for 5 minutes. Mix remaining flour in with a spoon (I use a wooden spoon). You don't need to knead this.
Let rise in warm place, covered, for 30 to 45 minutes (until double in bulk).
Spread quite a bit of flour on board, table, or counter. Press dough down with hands. Roll to 1/2 inch thick. Cut and let rise about 45 minutes.
Fry in deep fat. Makes 6-8 dozen.
To make a glaze for the donuts, use powdered sugar and hot water.

Ingredients:
1 can evaporated milk (or about 3 1/2 C. milk)
1 can hot water
1/2 C. oleo
1 C. sugar
1 tsp. (fist) salt
2 pkg. dry yeast
10 whole cardamon, ground up
3 or 4 eggs
10-12 C. flour
Scald milk (150 degrees). Melt oleo in milk after scalding. Cool to "warm to the touch."
Add sugar and salt. Mix in. Add yeast, cardamon, eggs, and flour. Knead until dough leaves hands.
Let rise to top of bowl or pan. Make into rolls, loaves, braids, etc. (E-mail me if you want to know what I'm talking about or how to do any of these!)
Let rise in pans. Bake at 375 for about 20-25 minutes. Rolls take less time than loaves.
