FLORENCE'S WHITE BREAD
1 cup hot water
1 big t. shortening
5 t. sugar
1 1/2 t. salt
5 cups water
2T. yeast
Melt shortening in hot water, add sugar and salt. Add rest of water and yeast which has been softened in 1/2 cup warm water and 2 t. sugar.
Add 13 - 14 cups flour ( enough to make a soft dough), mix well and let rise until double.
Knead and form into loaves. Let rise in pans until double.
Bake at 400 for 10 minutes, then reduce oven to 350 and bake for 35 - 50 minutes.
Makes 4 large or 5 medium loaves.
DILL BREAD
Ingredients:
2 Tbsp. yeast
1/2 cup lukewarm water
2 cups cottage cheese
1/4 cup sugar
1/4 cup dill seed
1 small onion, grated
2 Tbsp. butter
1 level Tbsp. salt
1/2 cup milk
1/2 Tsp. baking soda
2 eggs, beaten
5-6 cups flour
In saucepan heat cheese, sugar, dill, onion, butter, salt and milk to lukewarm water. Add baking
soda and eggs. Beat well. Add yeast to 1 1/2 cup of flour and add to mixture. Beat with mixer.
Add remaining flour to make soft dough. Knead and let rise in oiled bowl until double. Punch down
and shape into loaves. Let rise. Bake 5 minutes at 400 F, and 25 - 30 minutes at 350 F. Time is
approximate.
Mixture will make 2 large loaves or 3 small loaves.
This bread makes delicious salmon sandwiches, using
fresh Atlantic salmon and homemade salad dressing.
MY GRANDMOTHER'S ROLLS
1 cup scalded milk
1/3 cup butter (shortening)
1/3 cup sugar
1 yeast cake dissolved in water
salt
Add sugar, shortening, and salt to hot milk.
When cooled to lukewarm, add yeast.
Add enought flour to make a soft dough. Let rise to double its bulk, shape and put in pans.
Let rise again.
Bake in hot oven about 12 to 15 minutes.
AIR BUNS
2 1/2 cups warm water
1/2 cup sugar
1/2 cup oil
1 1/2 tsp. salt
2 T yeast
Soften yeast in 2/3 cup warm water and 2 t sugar.
Mix with other ingredients.
Add 6 - 8 cups of flour, enough to make a soft dough.
Let rise until double, 1/2 to 1 hour.
Grease cookie sheets.
Make rolls in the shape of balls and place about 2 inches apart on the pans.
Let rise until double and bake at 375 for 12 to 15 minutes.
Makes about 3 dozen rolls.
Hint: The rolls can be mad long and narrow for
delicious lobster rolls.
