PICKLES AND RELISHES
LADY ASHBURNHAM PICKLES
Ingredients:
6 large cucumbers (cut small)
1/4 cup salt
4 cups onions, chopped fine
2 cups vinegar
2 cups sugar
3 Tbsps. flour
1 Tbsp. mustard
1 Tbsp. tumeric
1 Tbsp. mustard seed
1 Tbsp. celery seed
Add salt to cucumbers in large pot and let stand overnight.
Drain and add other ingredients, mixing all together. Cook for 30 minutes.
Bottle.
PEPPER RELISH
Ingredients:
24 green tomatoes
12 green peppers
12 sweet red peppers
4 hot red peppers (5 or 6 if desired)
24 medium onions
8 cups sugar
6 Tbsp. salt
7 cups vinegar
Chop all peppers, tomatoes and onions. Cover with
boiling water and let stand for five minutes, then
drain. Add sugar, salt and vinegar. Bring to a boil
and cook for 30 minutes. Bottle.
This relish is delicious in dips, with meat and fish, and in sandwiches.
