ALMOND CHEESECAKES

Ingredients : -
4 on sweet almonds; 3 bitter almonds; a little rosewater; 3 eggs; 2 ounces butter; a little grated lemon peel; a little lemon juice; 3 ounces sugar; puff pasty.


Blanch and chop the almonds very fine. Mix in the rosewater. Heat up the eggs and add with melted butter, lemon peel, juice and sugar. Line 12 patty pans with puff pastry and fill with the mixture, flake in a hot oven for about 15 minutes.


BARM BRACK ( or Barn Break )

Ingredients : -
½ ( half ) a quartern dough ( enough for a 4 lb. loaf ); 4 eggs; 6 ounces sugar; 2 ounces caraway seeds; 4 ounces butter.


Melt the butter and mix into the dough with the sugar, adding the eggs, one at a time, and last the caraway seeds. Make into the shape of a round loaf or put into a large baking tin, let it rise in a warm place, and bake in a moderate oven for 45 minutes.


CARRAGEEN

Ingredients : -
½ ( half ) an oz moss (carrageen); a little lemon rind; 1 pint milk; 1 teaspoonful sugar. Wash and soak the moss in cold water.

Simmer milk and sugar with lemon rind for 10 minutes. Strain the milk over the carrageen and boil for 10 minutes. It will set like a jelly when cold.


COLCANNON

Ingredients : -
1 lb. boiled, cold potatoes ; 1 onion; salt and pepper to taste; 2 ounces bacon fat; 8 ounces boiled cabbage.
Mash the potatoes, chop the onion fine and fry gently in the bacon fat, add the potatoes and cabbage, season, mix well together and turn into a greased pudding basin. Re-heat in the oven, turn out on a dish and serve.


HUNTERS' PIE

Ingredients : -
6 mutton chops; 2 dozen potatoes; a little butter; pepper and salt to taste; a little gravy.

Braise the chops. Boil and mash the potatoes and add pepper and salt. Butter a large pie-dish, line with potatoes, put in the chops and cover with the remaining potatoes and bake in a moderate oven for 30 minutes. Cut a hole in the top and pour in the gravy. The gravy can be made with the water the chops were boiled in, and then thickened.


IRISH DELIGHT

Ingredients : -
1½ ozs. ( one and a half ounces ) cornflour; 1½ ( one and a half ) pints of milk; 2 eggs; a little fat; a little vanilla essence; ' dessert spoonful castor sugar; 3 ounces breadcrumbs.


Mix the cornflour with a little of the milk to a smooth paste. Bring the rest of the milk to the boil and stir gently into the corn flour and boil for 10 minutes, stirring all the time. Add the vanilla essence and sugar and pour into a shallow flat tin or dish. When quite cold cut into oblong slices, dip in beaten egg, roll in bread-crumbs and fry a golden brown in a little hot fat. Salt, pepper and grated cheese can be used instead.


IRISH STEW

Ingredients

2 lb. Potatoes, ½ lb.(half ) Onions, 2½ lb. ( two & a half lbs.) middle neck of lamb, ¾ ( three quarters) pint stock or water 1 level teaspoon salt, Pepper to taste , 3 level tablespoons finely-chopped parsley


Thinly slice potatoes and onions; Divide lamb into neat pieces. Cut away surplus
Fat; Put vegetables and lamb into saucepan.& Pour in stock. Season with salt and pepper
Bring to boil and lower heat ; Cover pan simmer gently for 1hour 30 minutes (or until meat is tender). Transfer to warm dish and sprinkle thickly with parsley.


Serves 4


PANCAKES

Ingredients : -
4 eggs; one eighth of a pint of cream; 1½ ozs. ( one and a half ounces ) butter; 3 ounces plain flour; a little grated nutmeg ; a little castor sugar.


Beat 2 whites of eggs with the yolks of 4, and mix in the cream, which should be warm. Then add melted butter and mix into a smooth batter with flour and add nutmeg. Fry the pancakes in a pan with a little butter. They should be very thin. Sprinkle a little sugar over them when rolled and serve hot in a dish.

PIG'S FACE

Ingredients : -
½ ( half ) a pig's head; cabbage.


Singe off all the hair and soak in a basin of water for 12 hours. Wash well, and boil in cold water, allowing 25 minutes for each pound. When cooked, lay the head on one side, score the skin and grill a golden brown in front of an open fire or in the oven. Cabbage should be put all round the pig's face to garnish. The liquor should be served for soup.


POTATO AND APPLE CAKE

Ingredients : -
6 boiled mashed potatoes; 1½ lbs.( one and a half lbs. ) flour; 8 ounces dripping ; 6 good sized apples; 3 ounces sugar


Rub dripping into flour and mix with potatoes into a stiff dough and roll out on a board about half an inch thick. Grease a fireproof dish and line with some of the pastry. Cover with peeled, cored and sliced apples and sprinkle with sugar. Cover with another layer of pastry and apples and pastry. Bake in a moderate oven for 1 hour. Serve hot.


POTATO CAKES

Ingredients : -
6 boiled potatoes; a tablespoonfuls flour; a little salt; butter.


Mash the potatoes and add the salt, and sufficient flour to make into stiff dough. Roll out on the board half an inch thick, cut into squares and bake on a griddle. Spilt and butter immediately and serve hot.
