West African Peanut Soup
- 2 cups onions, chopped
- 1 Tbsp peanut or vegetable oil
- 1/2 tsp cayenne or dried chiles
- 1 tsp fresh ginger
- 1 cup carrot chopped
- 2 cups sweet potato, chopped
- 4 cups stock
- 2 cups tomato juice
- 1 cup smooth peanut butter
- 1 Tbsp sugar, optional
- 1 cup scallion, chopped
Saute onions until translucent. Add cayenne and ginger. Add carrots and saute a couple of minutes. Mix in potatoes and stock. Simmer 15 minutes.
Puree with tomato juice, etc. Reheat carefully, add scallions.
