Anadama Bread
- 2 cups boiling water
- 1/2 cup yellow cornmeal
- 1/2 cup molasses or sorghum
- 2 tablespoons oil
- 1/2 cup lukewarm water
- 2 tablespoons yeast
- 1 tablespoon honey or sugar
- 5 cups flour or more
Whisk together boiling water and cornmeal.
Stir in molasses and oil. Cool mixture to lukewarm.
Combine lukewarm water, yeast and honey.Let this foam as cornmeal cools. Then add cornmeal mixture to yeast mixture and add 5 to 6 cups flour to make stiff dough. Knead 10 minutes. Put dough in oiled bowl, turning to coat, cover with damp towel and let rise till double.
Punch down with fingertips, cover and let rise again for 45 minutes.
Turn out on board and knead again. Oil 2 loaf pans, shape dough into pans, cover, and let rise until double.
Heat oven to 375 degrees and bake 15 minutes. Reduce to 350 degrees and bake 40 to 45 minutes. Remove from pans while hot, brush tops with oil and let cool on a rack.
