Sun-Dried Tomato Basil Dressing
- 2 ounces dry-packed sun-dried tomatoes
- 2 shallots minced
- 2 garlic clove minced
- 1 scallion chopped
- 2 tablespoons fresh basil chopped
- 1 tablespoon fresh cilantro chopped
- 1/2 cup red wine vinegar
- 1/4 cup balsamic vinegar
- 1/2 cup nonfat plain yogurt
- 1/4 cup buttermilk
- freshly ground black pepper
Combine ingredients plus 1/4 cup water and let sit for about 5 minutes to soften tomatoes. Transfer to a blender or food processor and process until smooth. Adjust seasonings. Serve at once or refrigerate for up to 2 days.
Whisk before serving.
