Vanilla Extract

2 vanilla beans

1 pint good quality vodka, brandy or rum

Carefully split the beans lengthwise to form two long pieces each. Place these into the pint of liquor and replace the cap. Store this in a cool, dark place for a period of four to six weeks. Shake the bottle occasionally. When the time is up, strain the contents, rinse the bottle and replace the liquid (vanilla extract ) in the bottle. Use as needed but keep the bottle tightly capped when not being used.
