Chicken w/Zuchini,Mushrooms and Garlic Cream Sauce


1/4 cup butter
3 skinless breasts,cut in half
3 cups sliced zucchini
3 cups sliced mushrooms
1/3 cup chopped onion
2 TBS.butter
2-3 garlic cloves chopped
3 TBS.flour
3 oz. cream cheese
1 10oz can of chicken broth
1/2 tsp.pepper
cooked rice or egg noodles.

Melt 1/4 cup butter in skillet until sizzling.
Add chicken. Cook over medium/high heat, turning
once,for 12-15 minutes or until browned and fork
tender.Remove chicken from pan then put
zucchini,mushrooms and onion in and sautee
until desired tenderness. Add chicken
back to pan and keep warm.
In seperate pan melt 2 TBS. of butter
until sizzling, add garlic for about a minute
add flour;cook for 1 minute until smooth and bubbly
Add next 3 ingredients. Cook stirring occasionally,for 5-7
minutes until smooth and thickened.
Serve over rice or noodles. (I prefer rice)
You may easily add more zucchini or mushrooms.
I was not a big zucchini eater but this is MARVELOUS!!!
It is so YUMMY. You may also
add more garlic for a stronger taste.




~Crock Pot Tender Meats~


One of my favorite things to do
for several reasons, is to slowly simmer different cuts of meat
in my crock pot. Number 1, its very delicious.
Its usually a very affordable dinner choice. It saves time in the kitchen.
Everyone who eats these easy dishes always makes you feel so good.
Its great for get togethers in the summer when you
would rather sit outside on the patio then slave in the kitchen ~grins~
You simply.............. Buy a nice sized cut of meat
this can be beef roast,pork roast or even chicken.
Toss it in the crock pot on HIGH heat season it as desired
I use garlic pepper salt and usually a few dashes
of balsimic vinegar Let it really get hot and sizzling
for a good hour or 2. Turn it to low
and let cook for several hours. you want a specific
amount of time don't you? well it depends on the cut of meat
I know this, its almost impossiblet overcook it so put
it on early early. I usually put it on around 11am
and its ready by 6pm.You can put it on earlier and
it will be ready earlier. When it starts to fall apart,
grab two forks and start pulling it apart into shreds.
Just pull, pull, pull. Once you have it all shredded up,
you may pour store bought BBQ sauce into the meat
until desired consistancy. Serve this delicious meat up on your choice
of bread...... hamburger buns, hard rools,whatever. I always
slice up some fresh pieces of onion You may also cook
a cut of beef for less time and serve up
fresh French dips. you won't want your meat to shred,
but be nice and tender. mmm,mmm, mmm.
