Thisiis a light scottish ale.A little smokey.A little smooth.

Ingredients:
- 4 3/4 lb. 2 row
- 1/2 lb. peated
- 1/4 lb 40,80,and120 crystall
- 1/4 lb. dextrine
- 1/8 lb. roasted
- 1/3 oz. challenger(60 min)
- 1/4 oz. cascades(15 min.)
- 1/4 oz. casacades(2 min.)
- 2 tsp. polyclar
- 1 tsp. Irish Moss
- 3 1/4oz. corn sugar
- Wyeast 1728(1 1/2 quart starter)
Brewing Instructions:
Mash all grains at 122 for 30 min. raise to 155 for 60 or untill iodine test
is positive.Raise to 168 for 5 min.Sparge with 160 to accumulate 4 gallons
for 45min.Boil for 1 1/2 hour adding hops at designsted times.Cool to 80 pitch
yeast and ferment.
- Primary for seven days at 68.
- Secondary for seven days with polclar.
