Laksa Herb Bread

I baked some ciabatta with pesto for an Italian colleague last week and since I am in the mood for more herbs, I decided to make some Laksa herb bread using my new Brotforms. I made up one with 2 oz of rye and 2 oz of organic wholewheat thrown in, sort of like Hamelman's Rustic Bread.  As I was busy the whole day clearing up the kitchen, the dough was left in the fridge. I took it out every couple of hours to do an S&F. After visiting my mum, I took the dough out to warm up before shaping it.

It was my first time with the new Brotforms and in my excitement, I forgot to slash the boules before loading them into the oven. As a result, they blew out below. The batards turned out better and they looked preety with their flour patterns. Expensive patterns. Perhaps too beautiful to slash.
