Sunflower Whole-wheat Bread

I happened to see a sunflower whole-wheat bread when I was at a local mall. I have always enjoyed this bread made by Simply Bread but it's been a while since I actually bought a loaf. Spotting in again at Cedele gave enough inspiration to bake one myself. I decided on a 30% whole-wheat composition. Since I was adding 10% toasted sunflower seeds, I decided to make the hydration at 75%. The pre-ferment was 30%.
