J Hamelman 'Vermont' Sourdough
I have some rye left so I made Hamelman's Vermont Sourdough.
As Hamelman said it himself, the yeast takes on a local character so I
should call this Singapore Sourdough instead. Needless to say, the flavor
was awesome and my wife wanted a slice after it was cooled but I told her to
eat it on the following morning for the flavor to develop.
I wanted to see if smaller loaves work out better
