Prepare for EACH serving:
1/2 cup shredded lettuce
Toss the lettuce with the vinegarette until coated.
Stack all ingredients in order given. Use mayo or mustard to taste.
Make a vinegarette of 1/4 cup olive oil,
1 Tsp Balsamic vinegar, 1/2 tsp seasoned salt
and a dash of freshly ground black pepper.
Set aside. This is an ample amount for 4 sandwiches.
2 thin slices each:
tomato
onion
cheddar cheese
2 to however many slices of ham you desire.
dill pickle slices
pickled banana peppers if desired
2 slices 12 grain bread, or your personal favorite.
~ A real cute appetizer ~One dozen flour tortillas, give or take 8 oz. cream cheese, softened 4 oz can chopped black olives 2 oz jar pimentos 2-4 green onions, sliced thinly 1 pkg ranch dressing seasoning a little milk
Mix all ingredients except the tortillas, thinning mixture with milk to bring to the consistancy of peanut butter. Spread each tortilla with about 2 Tb. of mixture and roll up jelly-roll fashion. Wrap tightly in plastic wrap for a few hours or overnight. Unwrap and slice into 1/2" slices... munch on the ends while doing this... it's all you're gonna get
Thanks to a nice little (and very expensive) sandwich shop downtown, I've come up with a variance on the pinwheel. This is more of a wrap. Spread flour tortillas with cream cheese. Top with jellied cranberry sauce and sliced turkey. Roll up and enjoy.
~ Substitute the less expensive imitation if you wish ~1 medium bell pepper, minced 1 medium onion, minced 1 c. chopped celery 1 T. worcestershire sauce 1 c. EACH mayonaisse & sour cream 1 1/2 c. prepared rice 1/2 tsp fresh ground black pepper 1/4 tsp dried dill weed 1 to 1 1/2 lb. crab meat, or use imitation
Mix everything together and put in lightly greased casserole. Top with approx 1 c. bread crumbs that have been lightly sauted in 1/4 c. butter. Bake at 350° for 30 min.
1 can cajun style stewed tomatoes 1 lb. ground beef 1 can each light and dark kidney beans 1 8oz can tomato sauce 1/8 tsp red pepper flakes 1/2 tsp celery seed 2 tsp chili powder 1/2 tsp powdered oregano 1/4 tsp cumin 2 cloves garlic, pressed 1 small onion, mincedSaute ground meat with onion. Drain off all fat. Add remaining ingredients. Simmer slowly until rich and thick, stirring occationally. (about 1/2 hour
Remove skin from chicken parts and boil
in water seasoned with salt and Italian
seasoning until done. Remove meat from
bone and chop.
Boil noodles according to package
directions and drain.
Toss everything together. Heat while
stirring until blended. Top with
parmesan.
Serve with garlic toast & green salad.
2 lb. chicken parts of your choice
2 T Italian seasoning
8 oz wide egg noodles
1 303 size can each:
Italian style stewed tomatoes, undrained
Black olives, pitted. Slice.
1 small can or jar sliced mushrooms,
drained
Parmesan cheese, (optional)
Bring a very large pot of water to a boil. Add to the pot
red wine vinegar, 2-4 jalapeno peppers, dash of salt,
Worcestershire sauce, and a dash of soy sauce. Add a little
oil to prevent sticking. Cook noodles in this approximately
15 minutes. While noodles are cooling, dice bacon and cook
with onion. Brown beef separately and drain. Mix beef with chili,
tomatoes and tomato sauce. Simmer until thick and chunky.
Toss all ingredients and serve.
1 pound ground beef
1 med onion
1/2 pound bacon
1 30 oz. Can Cajun style stewed tomatoes
8 oz can tomato sauce
8 oz can chili
16 oz. Narrow egg noodles
1/2 C red wine vinegar
2-4 jalapeno peppers
2 Tbls Worcestershire sauce
Dash of salt
Dash of soy sauce
Mix all dressing ingredients together and
pour over diced potatoes.
Chill several hours before serving.
3 med potatoes, boiled, pared and diced
4 Tbls mayonnaise
1 tsp mustard
1 tsp vinegar
Large dash Worcestershire Sauce
1 clove minced garlic
Salt and pepper to taste
1/2 tsp salad seasoning
2 Tbls water
Boil potatoes in salted water, cool, peel and grate.
In bowl combine all ingredients and form into patties
about 3" in diameter. Fry in your choice of oil, butter
or fat until golden and crisp. Absolutely delicious topped
with a mix of sour cream and horseradish.
(Approx. 1 tsp horseradish to 1/2 C sour cream.)
Editors Note: This is totally optional, but I serve this
with crumbled smoked salmon on top of the sour cream mixture.
1 pound potatoes (about 4 large)
1/2 C finely chopped onion
2 Tbls chives
1 egg
Salt and Pepper to taste
Allicia's Note: I like to add grated cheese and bacon to this
and cook it in the waffle iron.
Sauté onion in oil until transparent, then add everything else.
Simmer slowly, stirring frequently, until sauce reaches desired
consistency.
4-6 cups prepared rice, kept hot
3 c. dried pinto beans
1 large precooked meaty hambone
SEASONINGS:
1/2 tsp cinnamon
1/2 tsp cardamon
1/2 tsp ground clove
1 clove minced garlic
1/4 tsp paprika
1/4 tsp ground ginger
1/4 tsp allspice
1/4 C. maple syrup
1 tsp liquid smoke
Soak beans overnight in a dutch oven or very large pot,
rinse and drain. Add water to cover, plus an inch.
Add hambone and all seasoning ingredients. Bring to the boil,
then reduce heat and simmer until beans are tender and meat is
falling off the hambone, stirring occasionally.
Serve over hot rice.
Start with 4 hamburger patties, prepared to your liking.
For each 4 hamburgers:
3 Tablespoons mayonaisse
1 Tablespoon ketsup
1/2 teaspoon chili
1/2 teaspoon paprika
4 slices onion
4 slices Velveeta
4 hamburger buns
sliced jalepeno peppers, to taste
Mix the mayo, ketsup, chili powder and paprika in a small bowl. Set aside.
Cook the hamburgers using your favorite method. At the end of the cooking
period top with a slice of Velveeta and your desired amount of jalepenos.
Cover if necessary so that the Velveeta melts. Meanwhile, spread your desired
amount of sauce on each bun half, with a slice of onion on the bottom of the roll.
Top with the hamburger, add more jalepenos if desired. Top with the top of the
hamburger roll.
3 Tbls oil
3 tsp Worcestershire sauce
3 Tbls red wine vinegar
1 onion, finely chopped
6 Tbls brown sugar
3 Tbls water
Salt and pepper to taste
Sweet Beans and Rice
~ not for the feint of heart ~
2 large russet potatoes 1 medium egg, beaten 2 tsp flour, more or less 1/2 tsp salt, or to taste 1 slice American cheese, diced fine
Boil the potatoes in lightly salted water until soft. Allow to cool at room temperature until they can be comfortably handled. Grate into a medium sized bowl. Add the beaten egg and flour; fold gently to blend. Do likewise with the salt and cheese dice.
Using a dinner/dessert spoon, shape into small oblongs. Deep fry until golden brown.
The Accidental Trifle
Ever buy too many? Well, I did. Glazed donuts. Two of them went stale and I was just fixin' to toss them in the trash when I got an idea. Slice two glazed donuts and spread with marmalade (I suppose glazed logs or maybe even old fashioned would work). Put back together and slice into 8 pieces, then toss pieces into a medium sized bowl. Neatness does not count. Top with two containers Jello pre-made vanilla pudding. I layered one donut, one pudding, second donut, second pudding. Cover and chill. When it's time to serve dish and top with whipped cream. Yummy!
