Scalloped Potatoes and Pork Chop Casserole
6 Pork chops 1/2 inch thick
1Tbsp cooking oil
5 cups sliced peeled potatoes
6-1 oz. slices processed American Cheese
1/2 Tsp. salt, 1/4 Tsp. pepper
1/2 cup chopped green onion
1-10 1/2 oz. can condensed cream of celery soup
1 1/4 cup of milk
Brown pork chops on one side in hot oil in skillet
Remove pork chops as they brown
Reserve the meat drippings
Place half of the potatoes in a greased 13X9X2 baking dish
Top with cheese slices, then remaining potatoes
Place pork chops browned side up on potatoes
Sprinkle with salt and pepper
Cook onion in meat drippings until tender
But do not brown onions
Add soup and milk and heat, then pour over pork chops
Bake in 350 degrees oven for 1 hr. with cover
Remove cover and continue baking for 30 min.
Or until meat and vegetables are tender

Breakfast Casserole
6 slices of white bread, with crust trimmed off
Spray casserole dish with Pam and place bread on bottom
Cook 1 pound hot sausage until done
Spread sausage on top of bread
Top sausage with 2 cups of cheddar cheese
Beat 6 eggs, salt, pepper, and a small carton of half & half
Pour this over cheese and let set over night
Bake at 350 for 45 min. , be sure to bake with foil off

Hog Leg
1 can of french bread dough
1 pkg. of grated Mozzarella cheese
1 pkg. of grated Mexican or Pepper cheese
2 lb. hot sausage
Crumble sausage and fry until done
Then unroll French bread dough on a 9X13 baking sheet
Sprinkle with all the sausage
Then sprinkle Mozzarella cheese
Then sprinkle all the Mexican or Pepper cheese
Next start to roll up, roll it all up
Make sure it sealed good
Then just twist the ends around, looks like a hog leg
Bake at about 325 degrees until golden brown

Brocolli Casserole
1 cup mayonnaise
1 cup cream of mushroom soup
1 (10oz.) pkg, frozen chopped brocolli, thawed and drained
1 cup grated sharp cheddar cheese
2 eggs-beaten, 2 Tbsps. of chopped onion
1 Tbsp. of worchestershires sauce
1 tsp. of salt to taste, 1 tsp. of pepper to taste
1 cup crumbled Ritz crackers
2 Tbsps. melted margarine
Combine all ingredients into a large bowl
Pour into a buttered casserole dish
Top with cracker crumbs
Pour the margarine over top
Bake at 325 degrees for 30 min.

Cauliflower Casserole
1/4 c. butter
1/4 c. chopped bell pepper
1/2 lb. sliced mushrooms
1/4 c. flour
Salt to taste
2 cups milk
6 slices of American Cheese
1 med. cauliflower seperated,Par boiled in salt water
Paprika, to garnish
Saute bell pepper & mushrooms in butter until tender
Add flour, Stir in milk to make sauce.
Cook stirring until sauce thickens.
In buttered casserole dish place layer of cauliflower
Then 3 slices of cheese and half the sauce
Repeat layers again, then sprinkle with paprika
Bake at 350 degrees about 20 minutes
Until bubbly and slightly browned.

Escalloped Corn
3/4 Cup Butter (softened)
8 oz. sour cream
2 eggs beaten
1 can cream corn
1 can whole kernel corn, (do not drain)
1 pkg. corn muffin mix (your chice)
Mix together all ingredients and pour,
into 2 1/2 qt. casserole dish.
Bake at 350 degrees, for 1 hour

Snack Time Pizza Cups
3/4 lbs. ground beef
1 can(6 oz.) tomato paste
1 Tablespoon instant minced onion
1 teaspoon Italian seasoning
1/2 teaspoon salt
1 can (10 ounces) refrigerated biscuits
1/2 to 3/4 cup of shredded mozzarella cheese
Brown and drain beef. Stir in tomato paste,
Onion, and seasonings. (Mixture will be thick)
Cook over low heat for 5 minutes, stirring frequently.
Place biscuits in a greased muffin tin,
Pressing to cover bottom and sides.
Spoon about 1/4 cup of meat mixture into biscuit-lined cups.
Sprinkle with cheese. Bake at 400 degrees, about 12 min.
Or until golden brown.(makes about 12 pizza cups)

Chicken Casserole
4 large chicken breasts
2 cups chicken broth
1 cup chopped onions
1 cup chopped celery
3/4 T. Butter
1 (8 oz.) sour cream
2 cans cream of mushroom soup
1 box chicken Stove Top dressing
Bake chicken breast and cut into small cubes.
Saute onion and celery in butter and add sour cream, and soup.
Place cut chicken into 13x9x2 inch pan and cover with onion mixture.
Then cover with with the dressing
Boil broth and pour over this mixture.
Bake at 350 degrees for 45 min. covered
Then uncover and continue to bake 15 more min.

Crunchy Tuna Casserole
1 pkg. Noodles Romanoff
1 (6-1/2oz. or 7oz.) can tuna, drained
1/3 c. mayonnaise
2/3 c. celery, chopped fine
1/4 c. onion, chopped
1/4 c. green pepper, diced
1/4 c. pimento, chopped
1 can cream of celery soup
1/2 c. milk
Cook noodles as directed and drain.
Mix all remaining ingredients in with noodles
Bake at 425 degrees for 15 to 20 min.
