Lyd's Molasses Cookies
This is an old family recipe.

  • 1 cup sugar
  • 1 cup lard (you can substitute butter)
  • 1 cup molasses
  • 2 teaspoons baking soda
  • 1 cup hot water
  • 1/2 teaspoon ginger
  • 1/2 teaspoon cinnamon
  • Flour to roll (4-5 cups)
Mix the lard, sugar and molasses together until smooth. Add water and stir. Add the baking soda, ginger and cinnamon. Add enough flour until you get a very stiff dough that can be rolled out. Refrigerate the dough at least 2 hours. The longer the dough is refrigerated the better the cookie. Roll dough out until ¼ inch thick. Cut out cookies with cookie cutters. Bake in 350 oven for 10-15 minutes. Cookies are done when you push on the middle and there is no indentation left. (Have a grow-up do this step.) After the cookies have cooled, you can decorate them with frosting and sprinkles.

Nut Brittle
This was my great Aunt Rose's recipe.

  • 2 cups sugar
  • 2 teaspoons vinegar
  • 1/2 cup water
  • 1/2 pound nuts
  • 1/2 tablespoons butter
Boil sugar, water and vinegar until golden brown then add the butter. Do not stir while the sugar mixture cooks. Place nuts on a tin pan (cookie sheet with sides works well) and pour the hot mixture over them. Cut into 1-inch squares before it hardens.

Chicken Casserole
Our family made up this recipe.

  • 4 chicken breasts cut into bite size pieces
  • 1/2 cup chopped celery
  • 1/2 cup chopped onions
  • 1/2 cup sliced black olives
  • 1 can cream of mushroom soup
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 tablespoon curry powder (or to taste)
  • 12 ounces Chinese noodles
Cook chicken until done. Sauté onions and celery until tender. Mix salt, pepper, curry powder and cream soup until well blended in a casserole dish. Add chicken, onion, celery and olives to soup mixture. Stir well. Add the Chinese noodles and stir. Heat in 350 degree oven for 20 minute or until warmed through. You can also use a microwave oven to warm through.

Hot Cheese Dip
This was Grandma'S recipe.

  • 3 pounds Vleveta cheese
  • 1 pound cheddar cheese
  • 2 finely chopped onions
  • 1 teaspoon garlic powder
  • 2 #2cans tomatoes, chopped
  • 10 ounces jalapeno peppers
  • 2 tablespoons worchestershire sauce
Cut the cheese up into cubes and place in a large pot. Melt cheese over low heat, stirring often. When all the cheese is melted add the remaining ingredients. Simmer over low heat for 10 minutes. Allow to cool to room temperature and then place in small containers for storage. This recipe freezes well.

Pancakes
This is an old family recipe.

  • 1 1/4 cups flour
  • 2 /12 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 3 tablespoons sugar
  • 3/4 teaspoon salt
  • 1 ¼ cup milk
  • 3 tablespoons oil
Mix all of the dry ingredients. Add milk and oil and stir until smooth. Heat a griddle on the stove until hot. Place a large spoonful of batter on the griddle; cook until the bubbles on the top have popped then turn. Cook the other side until golden brown. Serve with syrup.

Waffles
This was Grandma's recipe.

  • 2 cups flour
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 2 eggs, separated
  • 2 cups milk
  • 4 teaspoons melted butter
Shift flour, salt and baking power. In a mixer beat the egg yolks and milk until frothy. Add the shifted dry ingredients and butter to the egg and milk mixture. Beat until smooth. In separate bowl beat egg whites until you have stiff peaks. Fold in the beaten egg whites into the batter. Cook in waffle iron according to manufacturer's instructions.
