Here's a wee recipe that goes way back - very simply but absolutely delicious.
(For those who don't eat hamburger, ground tofu can be used very nicely in it's place).
Cook 2 cups of rice.
While that is cooking thoroughly brown/cook a lb of hamburger -
add onion & chopped green pepper (both can be omitted if desired)
and then add a large can of diced, stewed or whole tomatoes -
whatever kind you have on hand. If you don't have canned then cut up some fresh
and add a bit of tomato juice. When the rice is done either place on a platter
and pour the ingredients overtop or add the rice to the pan of cooked ingredients
and mix -Serves 4 to 6.

AUTHENTIC CANNELLONI

1 and 1/2 cups cooked chicken
1 package cottage cheese (16 oz)
1/2 cup parmesan cheese (grated)
1 tbsp salt
1 tbsp pepper
1 clove garlic (minced)
(I use two cloves but I LOVE garlic)
1 box manicotti shells
1 jar spaghetti sauce
1 jar Alfredo sauce

Cook pasta to package directions.

Preheat oven to 350 degrees

Mix in medium bowl: Chicken, cottage cheese, 1 cup parmesan cheese, salt, pepper and garlic.
Place contents in large ziplock bag and cut one corner roughly the size of the pasta opening.
Stuff shells with mixture and place in a well-greased 13 x 9 baking dish.
Sprinkle half of the remaining parmesan cheese over stuffed shells.
Pour Alfredo sauce over top half of the pasta. Pour spaghetti sauce over bottom half of pasta,
(each stuffed shell should have Alfredo sauce and spaghetti sauce on the top).
Sprinkle the remaining parmesan cheese over the top. Bake for 30 minutes.
Remove and let cool for five minutes. Prep time: 20 minutes Cook time: 30 minutes.

EGG MOUNTAINS

4 eggs, scrambled
2 English Muffins, toasted and split
4 slices ham
4 slices processed cheese
butter or margarine
Pre heat broiler (or oven). Lightly toast muffin halves in toaster.
Butter as desired. Top each muffin half with a slice of ham.
Spoon scrambled eggs on top of ham. Place a slice of cheese
on each egg "mountain." Place four "mountains" on cookie sheet.
Heat under broiler until cheese melts, (1 - 4 minutes).


Keg 'n Barrel St. Bernards

Layered Chili Dip

1 8 oz. pk Cream Cheese
1 can Hormel chili no beans
1/2 green pepper chopped
1 bunch green onion chopped
1 lb block sharp Cheddar and 1 block Monterey Jack cheese grated
Layer all as listed and bake at 350* till cheese is golden brown,(approx. 30 mins.)
Eat with tortilla chips

Kristie's Amarillo Ground-Beef Delight

1 lb. ground lean beef
1 medium onion, chopped
3 Tbs. butter
1 small green pepper, seeded and chopped
1/4 cup chopped green chili pepper (canned)
1 can cream of mushroom soup
1/2 soup can water
1 pkg. cream cheese, 3-oz. size
salt to taste
Saute beef and onion in butter in a heavy skillet
over moderate heat until onion is golden.
Break up and separate the meat with a fork as it cooks.
Add chopped green pepper and cook 3 to 4 minutes.
Add green chilies, mushroom soup and water.
Blend. Simmer 29 minutes, stirring frequently.
Add the cream cheese broken into bits, and stir gently until melted.
Serve with rice or wild rice or toast spread with chili butter*. Serve 6.
*NOTE:
To make Chili Butter, simply work butter and chili powder
together with a fork in a mixing bowl until thoroughly blended.
One tablespoon chili powder to 1/4 lb. butter
should be your point of departure.
