Biscuits

My family and guests
really love these biscuits. They are not the fluffy kind. They
are flatter and more crunchy.
~
1 and 1/2 cups all-purpose
flour
1 tablespoon baking powder
1 tablespoon sugar
1 teaspoon salt
1/2 cup milk
1/3 cup soft shortening
(vegetable oil may be used)

Stir together flour, baking
powder, sugar and salt. Make a well in center and add milk and shortening.
Stir with fork only until well mixed. Turn onto lightly floured surface
and knead 6-8 times. Pat out and cut with biscuit cutter. Place
on ungreased baking sheet and bake in 450 degree oven 10-12 minutes or
until golden.
(Brush
with melted butter shortly before they are brown
and
return to oven to finish baking)

Broccoli
Cornbread
~
Almost a complete
meal in itself
This recipe took 4th
place in a local bake off and was submitted by Glenda, a long-time childhood
friend of mine, known for her good cooking!!
~
One 10-oz. pkg. frozen chopped
broccoli, thawed
One 8 1/2 oz. cornbread
mix
3 eggs, beaten
1 medium chopped onion
1 cup shredded cheddar cheese
1/2 cup butter or margarine,
melted
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/4 teaspoon ground red
pepper

Press broccoli between paper
towels to remove excess moisture. Combine cornbread mix, eggs, onion,
cheese, butter and seasonings. Stir well. Stir in broccoli.
Pour into greased 8" square pan. Bake in 375 degree oven for 25-30
minutes or until golden. Cool slightly and cut into squares.

Orange
Corn Muffins
~
For a special dinner,
this
good-tasting muffin
with just a hint of orange
is enough to please
any holiday guest
~
1 cup yellow cornmeal
1 cup all-purpose flour
1/3 cup sugar
4 teaspoons baking powder
1/4 teaspoon salt
1 beaten egg
1 cup milk
1/4 cup vegetable oil
1 tablespoon grated orange
peel
~
In a mixing bowl, combine
cornmeal, flour, sugar, baking powder and salt. In another bowl,
combine egg, milk, oil and orange peel. Add to cornmeal mixture,
stirring just until ingredients are combined. Fill greased muffin
tins 2/3 full. Bake at 425 degree oven for about 15 minutes or until
lightly brown. Remove from the tins and serve warm.

made by substituting lemon peel

Cheddar-Garlic
Biscuits
~
We've been told these
taste very similar
to a famous seafood
restaurant's biscuits.
You can decide for
yourselves ...
~
2 cups Bisquick
1/2 cup shredded sharp cheese
2/3 cup milk
1/4 cup melted butter
1/4 teaspoon garlic powder
~
Mix Bisquick, cheddar cheese
and milk into soft dough.
Beat with a wooden spoon
for about 30 seconds.
Spoon onto greased cookie
sheet.
Smooth tops of biscuits
with spoon (otherwise, Bisquick forms sharp, hard points).
Bake 8 - 10 minutes at 450
degrees.

While baking, melt butter
in pan and stir in garlic powder.
Take biscuits from oven
when done and brush garlic-butter on tops and serve hot.

Yields 10 biscuits

Irish
Soda Bread
~
I used to make this
bread all the time
when we were first
married. We'd butter
it and eat the entire
loaf at night while
watching television
...
~
2-1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
2 tablespoons sugar
1/2 cup butter
1/2 cup seedless raisins
2 teaspoons caraway seeds
(optional)
3 tablespoons apple cider
vinegar
3/4 cup milk
Milk for glazing top of
bread
~
Heat oven to 400 degrees.
Sift flour with next 4 ingredients.
Cut in butter with 2 knives.
Stir in raisins and caraway
seeds.
Mix together vinegar and
milk.
Make a well in center of
flour mixture and
add liquid all at once,
stirring vigorously with
fork until dry ingredients
are moistened.
Turn out onto a lightly
floured board and
knead gently 8-10 times.
Shape into round ball and
place on a greased 8" pie plate.
Cut a large X across top
of bread, from side to side.
Brush top with a little
milk for a nice glaze.
Bake at 400 degrees for
15 minutes ...
Then lower oven temperature
to 375 degrees
for an additional 30 minutes,
or until center of bread
tests clean, or loaf of
bread tapped on bottom sounds hollow.

Remove from pan, cool about
1 hour before cutting
OR
while still warm, slather
with butter and enjoy.
