~ Even my kids like this veggie dish ~ Two 10-oz. chopped, frozen broccoli, cooked and drained 1 cup Minute Rice 1/3 cup butter or margarine 1 medium chopped onion Small jar regular Cheese Whiz 1 can of cream of mushroom soup ~ Combine in large casserole dish, sprayed with vegetable spray, and bake in 300 degree oven for 45 minutes. ~ For very large, 9 x 13 inch casserole, double all ingredients except for broccoli, which is the way I usually make it. ~ For variation - fresh cooked rice can be used (cook rice before mixing with other ingredients); use Velvetta Cheese and cream of broccoli soup. * Return to Vegetable Menu * Sweet Potato Casserole ~ Honest to goodness, you'd even bet your Granny's teeth that this was a dessert! ~ 2 cups cooked sweet potatoes, mashed 1 cup white granulated sugar 1/2 cup butter 2 beaten eggs 1 teaspoon vanilla 1/3 cup milk ~ Mix all ingredients together. Place in baking dish and top with the following topping: ~ Topping: . 1 cup light brown sugar 1/2 cup self-rising flour 1/3 cup butter 1 cup chopped pecans ~ Mix well and spread on top of sweet potato casserole ~ Bake 25 minutes in 350 degree oven * Return to Vegetable Menu * |
