Grandma Rhea's Chocolate Peanut Butter Fudge | * |

~ A scrumptious candy from my grandchildren's Nanny Susan ~ One 16-oz. jar, plus one 10-oz. jar maraschino cherries with stems 3 tablespoons softened butter 3 tablespoons light corn syrup 1/4 teaspoon salt 2 cups sifted powdered sugar One 12-oz. pkg. semi-sweet chocolate 1 tablespoon shortening ~ Drain 50 cherries and pat dry ~ Combine butter, syrup and salt and knead in powdered sugar ~ Allow 1/2 teaspoon mixture per cherry - wrap around cherries ~ Chill 2 hours ~ Combine chocolate and shortening in double boiler - stir until melted ~ Dip cherries by stems and place on waxed paper - Chill ~ Keep in refrigerator ~ Hide the candy from your "significant other" !! ~ * Return to Candy Menu * Seafoam (like Divinity) ~ From my Italian friend Judy Z. back in '69 in Dover Hey Judy Z. ... Hope you're tuned into this channel !!! You could really cook ... send me some more of your recipes ~ (Important....Do NOT double recipe) ~ 3 cups granulated sugar 1/2 cup light corn syrup 2/3 cup water 2 egg whites 1/8 teaspoon salt 1 teaspoon vanilla 1 cup chopped pecans (or candied fruit) Green food coloring, if desired ~ Boil sugar, syrup and water together until it will form a hard ball (250-266 degrees F) when dropped in water. ~ Beat egg whites and salt for 3 minutes with mixer in large metal bowl (Make sure your bowl and utensils are spic and span and grease-free) ~ Pour syrup slowly into beaten egg whites while continuing to beat. Continue beating until mixture passes the glossy stage. Add nuts or fruit, vanilla and coloring and continue beating until mixture forms a peak when beaters are raised. (Don't beat past this stage or candy will be dry and crumbly). ~ Drop on waxed paper with a teaspoon ~ Eat them before the kids get to them!! * Return to Candy Menu * Grandma Rhea's Chocolate Peanut Butter Fudge ~ Mama used to make this candy every year and give it to all her friends and church folk at Christmas time... ~ 2 cups granulated white sugar 1 small can (5.5 oz.) chocolate syrup Fill 1/2 of the chocolate syrup can with regular milk (whole, sweet cow's milk) ~ There's just so many different kinds of milk these days, so thought I oughta explain!! ~ Stir sugar, chocolate syrup and milk until mixed good and cook until mixture "strings" - then remove from heat ~ Make sure you don't cook this too long or it will be sugary and granulated. Then you'll have to eat it out of the pot with a spoon!! ~ Add: 1 teaspoon vanilla 1/2 teaspoon butter 3 tablespoons peanut butter ~ Stir until thickened. Spoon (or pour) into buttered (or sprayed with vegetable oil) pan and let hardened. ~ Just don't give it all away to your buddies ..... save some for yourself!! ~ * Return to Candy Menu * |
