Cocoa Ricotta Creme
Ingredients:
110 g ricotta cheese
1/2 tsp unsweetened cocoa powder
1/2 tsp vanilla essence
1 tsp sugar
dash of instant coffee powder
5 M&M minis
Method:
Mix together the ricotta, cocoa, vanilla and sugar. Serve chilled with a dusting of coffee powder and M&M minis.
Carrot Kheer (Payasam)
Ingredients:
carrots - 1/2 kg
sugar - 1/2 kg
1/4 tp cardamom powder
a pinch of saffron
35 g roasted cashews
750 ml milk
Method:
Grate carrots and boil them for half an hour. Add saffron and mix well. Add sugar and stir constantly till sugar dissolves. Add cardomom powder and boiled milk. Mix well and take off heat. Refrigerate after it has cooled. Serve cold with roasted cashew nutss. It is is a very healthy dessert.
Onosa aambea saasam (A dessert of mangoes and pineapples)
Ingredients:
1 cup ripe, fresh mango, cubed
1 cup pineapple chunks (canned: drain, save juice to grind spice mix)
1 cup mango pulp
1/2 cup coconut powder
1/4 tsp red chilli powder
1/4 tsp. tamarind paste
1/2 tsp. salt
1/2 cup (or less) sugar
1 tsp. mustard seeds, ground
1/2 cup red grapes (optional)
Method:
Mix salt, sugar, mango cubes, pineapple chunks, mango pulp in a bowl. Stir well, keep aside covered.
Blend coconut powder, tamarind paste, mustard seeds powder, red chilli powder and pineapple juice. Add this mix to the bowl of fruits and mix well. Refrigerate. Serve cold.
Note: Pineapple chunks come in heavy or light syrup. Adjust the amount of sugar accordingly. Optionally, you may add half a cup of red grapes.
Raj Bogh
Ingredients:
6 slices of Bread (remove the brown edges)
Cooking Oil
Sugar Syrup
6 tsp Shredded coconut
3 glaced Cherries
Method:
to make Sugar Syrup: Mix sugar & water(1:1). Heat until it becomes a thick liquid.
Heat oil in a pan. Fry the bread slices until golden brown. Cut the slices diagonally. Dip them in the sugar syrup. Take a slice, spread a spoon full of shredded coconut on it and press with another slice(just like a sandwich). Garnish each with half a cherry and serve.
This is a very rich dessert.
Layali Lubnan (Arabic Sweet)
Ingredients:
2 cups Full Cream Milk
1/2 cup semolina
2 eggs
1 cup sugar
1 tbsp rose water
1 tbsp orange blossom water
2 cans of 170g Cream
2 bananas
slivered almonds for decoration
Method:
Heat the milk and add semolina, stir until boiling, then simmer. In a separate bowl, beat eggs and sugar together. Add this mixture to the simmering milk, stirring vigorously for 3 minutes or until it thickens. Remove the pan from the heat, add rose water, orange blossom water and Cream. Cut bananas into circles (place them in lemon juice for a while and then remove them to preserve the colour of the bananas). Pour the mixture into the tray, cover with banana circles and sprinkle almonds on top.
Uthmalia (Arabic sweet)
Ingredients:
1 kg shredded dough
5 cups cooking oil
2 cans x 170 g Cream, cooked (check method below)
4 cups syrup (check method below)
1 can x 170 g Cream
1/2 cup ground pistachos for garnishing
Method:
to make 3 cups Sugar Syrup: Mix 2.5 cups of sugar in 1.5 cups of water and heat moderately without stirring. Increase the heat until the mixture boils. When it boils, add a tsp of lemon juice. Allow mixture to boilslowly until it thickens. Add a tsp of rose water. Keep mixture on heat for few minutes then allow to cool.
cooked nestle cream: Mix 3 cups of prepared Nido milk with 1/4 cup of sifted plain flour. Place mixture on medium heat while stirring. When it boils, simmer for five minutes, pour into a seperate dish and allow to cool. Mix 2 cans x 170 g of cream with prepared mixture to make it ready to use.
Divide the shredded dough into two parts. Fry one part in oil until golden brown. Drain fried dough and fry second part in the same hot oil. Place first part of fried dough in a plate and cover evenly with cooked cream. Cover with remaining fried dough. Evenly distribute syrup until Utmaliah is damp. Garnish surface with Cream and ground pistachios.
This is a very rich dessert.
