Bandhakopi'r Ghanto (Cabbage Mix)

Ingredients:(Serves 4)

  • Cabbage 1 kg. grated.
  • Potato 2 nos. cut into small pieces
  • Peas 100 gm. (3.5 oz.)
  • Cumin seed ½ tsp.
  • Bay leaf 2-3 nos.
  • Greenchili 2-3 nos.
  • Turmeric powder ½ tsp.
  • Cumin powder 1 ½ tsp.
  • Coriander powder 1 tsp.
  • Red chili powder ½ tsp.
  • Oil for cooking 2 ½ tbsp.
  • Ghee or butter 1 tbsp.
  • Salt to taste
  • Garam masala powder½ tsp.
  • Sugar 1 tsp. (leveled)
  • Tomato 1 no. sliced into 1 cm. pieces.
  • Almond 2 tbsp. roasted.
  • Raisins (kishmish) 1 tbsp. (Soaked in water for 15 to 20 mins before cooking. Optional)

Procedure:

Heat 1 tbsp oil in a pan. Fry the potato and peas in the pan, and keep aside.

Heat 1 1/2 tbsp oil in the same pan. Add cumin seed, bay leaf, green chili. Fry for 10 - 15 secs. Add grated cabbage, salt, turmeric powder. Stir to mix well. Put a lid and cook on medium heat for 5-7 mins.

Add cumin, coriander and red chili powder. Stir to mix well. Put lid and cook for 10 mins on medium heat.

Add potato, peas, almond, raisins, sugar and stir. Add garam masala and ghee. Stir well. Put on lid and cook on low heat till all the ingredients (especially, the potato) are cooked well. Now it is ready to serve.

You can have it with rice, roti, paratha, bread. You may even use this as a stuffing for sandwich and patties.
