Hobo Stew Serves 24
4 lbs hamburger 2 onions (chopped) 4 C water 2 t chili powder 4 C raw potatoes (cubed) 4 cans corn (drained) 4 cans Ranch Style Beans Salt and Pepper
Brown meat with onions, season with salt and pepper. Drain fat. Add chili powder, water, potatoes. When potatoes are almost done, add corn and beans. Simmer until potatoes are tender
Sloppy Joes Serves 8
1-1½ lbs hamburger 1 sm onion 2 cans corn 1 can tomato sauce hamburger buns
Brown meat, onions, drain fat. Add corn, tomato sauce. Simmer for 10 minutes. Serve on buns
Mexican Casserole Serves 6
1 lb hamburger 1 onion (chopped) 1 can Ranch Style Beans 1 can Spanish rice FritosCheese (grated)
Brown meat and onion. Drain fat. Add beans and rice. Mix. Sprinkle crushed Fritos and cheese on top. Warm until cheese melts.
Dutch Oven LasagneTroop 337
1½ C water2 20 oz jars spaghetti sauce1 16 oz box lasagne noodles 1 container Ricotta cheese 8 oz mozzarella cheese (thinly sliced) ½ C grateed parmesan cheese
Line #14 Dutch Oven with foil. Combine water with spaghetti sauce in bowl or ziplock bag. Cover bottom of oven with 1½ C sauce. Arrange layer of uncooked noodles, slightly overlapping on top of sauce. Spread half the ricotta cheese and half the mozzarella cheese and 2 T parmesan. Add another layer of sauce. Repeat with another layer of noodles, remaining ricotta, mozzarella and 2 T parmesan. Top with a layer of noodles. Pour remaining sauce, spread evenly to cover edges of noodles. Sprinkle with ¼ C parmesan. Cook 30 minutes with 20 briquets under and 15 on top. (This is a level 2 recipe)
Mock Cheese Enchiladas Serves 8
1 sm bag Fritos 1 can cream of chicken soup 1 sm can chopped green chili peppers 1 sm onion (chopped)1 14½ oz can evaporated milk½ lb grated longhorn cheddar cheese
Heat soup, chilis, and milk. Put Fritos in bottom of pan and keep making layer of soup, cheese, onion and Fritos until all are used. Heat in box oven until cheese melts. Can be cooked in Dutch oven. Corn tortillas can be substituted for Fritos. (level 2) INDIVIDUAL FOIL CHICKEN DINNERS
1 roll heavy duty foil 1 chicken breast per person! onion (chopped or thinly sliced) 1 zucchini per 3-4 people1 yellow squash per 3-4 people,br> i mushroom per person, sliced 1 can new potatoes, sliced garlic salt and lemon pepper
Get large piece of foil and place on table shiny side up. Lay onions on foil. Place chicken breast on onions season. add veggies on top of chicken and add alittle more seasoning. Pull up sides of foil and roll down together. Roll up ends. Place on coals or grill- turn frequently to avoid burning.
INDIVIDUAL VAGABOND STEW
Ground Beef (about 3 oz per person) potatoes diced into 1/2 inch cubes (about 1 per three people) carrots, sliced thin (one per three people) 1-2 large onions (coarsely chopped). Salt and pepper Heavy duty foil.
Lay sheet of foil on table shiny side up. Pull meat apart into small bite-size pieces. Put all ingredients on foil. Season. Wrap it up like you did in the last recipe. And cook until meat is done and potatoes are soft.
