Experience a taste of Italy before arriving. Below is a recipe from one of my
favorite restaurants in Trastevere, Rome. Enjoy!
Pasta con cacio e
pepe (with cheese and pepper) for Two
Ingredients:

pasta of your choice(mine is spaghettini) ˝ pound |

3 tablespoons extra virgin olive
oil |

2 tablespoons of butter |
|
Grated pecorino cheese |
|
2 large cloves of garlic |
|
Freshly grated pepper (coarse) |
Directions:

Boil pasta in salted water according to the directions on
the box.

Meanwhile remove and discard the cores (new growth) from
the garlic, crush it, and sauté in the oil on low heat until it is golden (not
brown!!!).

Discard the garlic and let the infused oil cool then add
the butter.

When the pasta is al dente, reserve a cup of the salted
cooking water and drain the pasta.

Reheat the oil on medium heat, add the drained pasta and
mix with the oil and freshly grated pepper - add a little of the reserved
water to moisten the pasta.

Sprinkle liberally with the grated cheese, toss, and
serve.
Serves two; perfect for an intimate dinner!
