In a large bowl, cream together sugar, butter, extracts, and shortening. Add eggs ONE AT A TIME, beating very well after each one. In a small bowl, combine flour and salt. Alternate dry mixture and milk into the creamed mixture, until all is used. (Beat very well after each alternation.)
Pour into tube or bundt pan that has been greased and floured, and bake at 325 degrees for about 1 hour and 15 minutes. Use the toothpick method to ensure cake is done in the middle. Frost if desired, but is great to eat without the frosting!
Chocolate Brownies
6 TBS cocoa + 2 TBS oil, or 2 sq. chocolate, melted
1/2 cup margerine, melted
1 cup sugar
2 eggs
1 tsp Vanilla extract
1/2 cup flour (all purpose)
1/2 tsp salt.
Preheat oven to 350 degrees. Melt margerine and chocolate together if necessary. In a medium bowl, mix other ingredients and add chocolate mixture. Pour into a 8 x 8 x 2 greased and floured pan. Bake for approximately 20 minutes, until knife comes out clean.
Spray 9 x 13 casserole with butter flavored spray. Lay fruit in bottom of pan, cover with cake mix, and dot with butter, all over the top. Bake at 350 degrees for about 40 minutes, until brown.
Virginia Louise's Mountain Pie
1 cup flour, all purpose
dash salt
1 1/2 tsp baking powder
1 cup sugar
2/3 cup milk
3/4 stick butter
1 can prepared pie filling
Place butter in glass 9 X 13 casserole, and put in oven on 350 degrees, until melted. Into mixing bowl, put dry ingredients, add milk, and stir. Pour over melted butter. Top with spoonfuls of pie filling. Bake at 350 degrees for 45 - 60 minutes.
