6 - 8 ounce jars

Singe Cactus fruit to remove the spines from the fruit. Peel, put through pureer. Measure prepared juice and lemon juice into a 6 or 8 quart saucepan. Measure sugar into separate bowl, and set aside. Add 1 package of pectin to fruit juice and mix thoroughly. Bring to a rapid boil over high heat. Constantly stirring to prevent scorching. When full rolling boil, add sugar and mix well. Bring to full rolling boil and continue to boil for 2 minutes. Remove from heat. Skim off any foam. Fill hot jars and quickly cover with lids and screw bands tightly. Turn jars on lids (upside down) for 5 minutes and then turn upright. After 1 hour check to see that all have sealed.
To prepare Juice: I use a small torch to singe the fruit and burn away the spines. If you have a gas stove you can singe them on it. I hold them with tongs and wear rubber gloves to protect myself from the spines.
To prepare jars and lids: Boil jars in a saucepan filled with water for 10 minutes. Place NEW flat lids and bands in boiling water and remove from heat. Let stand in water until ready to use. Drain each well just before filling.
I use the Red Fruit from a Silver Dollar cactus which makes a Red Jelly. The Fruit from a Prickly Pear makes a Yellow Jelly.

1/4 | yellow bell pepper, diced | |
1 | Cactus pad, Sliced (Prickly Pear) | |
1 | whole | tomato, diced |

On greased griddle, or skillet put potatoes in single layer at 300 F. Salt & pepper generously and cook about 10 min. Add onion, green onion, peppers, cook about 10 minutes more then add cactus pad. After these items have browned, bust eggs over and mix well. Allow eggs to cook until completely set. Serve at once. Pass the Salsa.
To prepare Cactus Pads: Be sure to wear rubber gloves, to protect your hands from the spines. To prepare Cactus pad remove the spines with a knife, scraping the spines, moving in a direction opposite to the growth of the spines.. Now cut the thorny top of the pad off taking about an 1/8". Slice lengthwise 3 time and then, slice in thin strips. This will give the cactus pad the appearance of a green bean. Be sure to use only the newest growth.
As I have used this method of preparing cactus to serve to many people, not only for breakfast, I also serve this as a side dish, it was suggested that I add this to my site. I don't tell people what it is they are eating until afterwards and everyone has enjoyed their new experience.

Boil cleaned and diced pad in water with salt, onion and garlic, no longer than 15 minute, drain, rinse. Set aside. Brown flour in oil, Set aside. Lightly fry beaten eggs, add Chili powder, and fry lightly, add Cactus and stir to mix well. Add ground black pepper and small amount of Cilantro.

Lightly fry and mixed eggs, add Chili powder to taste, and fry lightly. Add corn and green peppers and cook until done. Add set aside cactus and stir to mix well. Add a small amount of water, ground black pepper and cilantro to taste.

Into a big salad bowl , add, thin slices red onion and/or green onions, dice tomato, a diced jalepeno pepper, cilantro as much as you like, then add salt and pepper to your taste, toss well and serve.
