Please be patient as we try and get this page up, and make corrections to directions and the quantity they make. Most of these recipes are many years old, and family favorites. They are recipes going back many years, and we have been using most of them for over 40 years. As a young person, I had to measure the amounts for the ingredients, so that I could duplicate these cookies, often upsetting the great aunts or aunts, but I never wrote much on my index cards about any directions. Most of these recipes come from relatives long gone, but their cookies live on!!!! Hope you enjoy them if you try them. This is not a printer friendly page.

Brown Rim Cookies

Makes 3 dozen

1 cup shortening
2/3 cup granulated sugar
2 eggs
1 teaspoon salt
1 teaspoon vanilla
2 1/2 cups flour

Cream together shortening, sugar, eggs and vanilla, add flour. No leavening used.

Add one or more of the following :
1 cup Raisins
1 cup chopped nuts
1 cup shredded Coconut

Drop by rounded teaspoon, and bake.
Bake 375 8 to 10 minute

Butter Balls

Makes 2 1/2 dozen cookies

1 cup butter
3/4 cup walnut, chopped
2 tablespoons confectioner's sugar
2 cups flour

Mix altogether, then take 1 teaspoon of batter in the heart of your hand. Roll into 1" balls. Place on pan. Bake. Roll in powdered sugar right away as soon as they come out of the oven, careful as they do break easily, and then again after cookies are completely cool.
Bake 350 - 8 minute

Butterscotch Cookies

5 dozen

1 cup shortening
4 cups brown sugar
4 eggs, beaten
1 tablespoon cream of tartar
1 tablespoon baking soda
1 tablespoon vanilla
salt, to taste
6 cups flour

Cream shortening, sugar, add eggs and vanilla, mix remaining ingredients .Divide dough in half, shape into two 2" rolls and cover with wax paper, chill several hours or over night. Slice thin.
Bake 350 - 12 minutes

Chip Butter Balls

3 dozen

1 3/4 cups flour
3/4 cup pecan, chop
1 cup semisweet chocolate chip
3/4 cup butter
1/4 teaspoon salt
1/2 cup confectioner's sugar
3/4 teaspoon rum extract
2 teaspoons water, cold
confectioner's sugar

Combine flour, pecans, and chip. Cream butter, salt and sugar until fluffy, add extract and water. Mix. Gradually add flour mixture and blend. Mold dough into 3/4" balls, crescents or wreaths. Bake on ungreased sheet, until just beginning to brown. When baked and still warm roll in confectioner's sugar. Cool thoroughly then sprinkle with confectioner's sugar. Store air tight.
Bake 325 20 - 23 minutes

Chocolate Butter Balls

3 dozen

1 cup butter
3 tablespoons confectioner's sugar
2 cups flour
2 teaspoons cocoa
1/2 cup pecans
1 teaspoon almond extract
1/2 teaspoon milk

Cream together butter, confectioner's sugar, extract and milk. Mix flour and cocoa, add to make medium stiff dough. Chill, form into balls. Bake. Roll in confectioner's sugar while hot and again when cool.
Bake 400 8-10 minutes

Chocolate Chip Bars

Makes 3 dozen

2/3 cup shortening
1 cup brown sugar
1 egg
1 teaspoon vanilla
1 1/2 cups flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup nuts, chop
1 cup chocolate chips

Cream shortening, sugar, egg and vanilla. Add dry ingredients and mix well add nuts and chocolate chips.. Spread into 13x9x2 pan.
Bake 375 - 25 minutes. Cut into bars.

Chocolate Cookies

Makes 5 1/2 dozen

1 cup shortening
2 cups sugar
3 tablespoons cocoa, Heap
1/4 teaspoon salt
3 tablespoons cream
2 eggs
3 1/2 cups flour
1 teaspoon cinnamon
1 teaspoon baking soda
granulated sugar

Cream shortening, sugar and eggs. Mix dry ingredients and add, blending well. Chill, form into balls and flatten in either colored or regular granulated sugar, place on a greased cookie sheets.
Bake 375 - 12 minutes

Chocolate Crackles

Makes 4 dozen

1 cup semi sweet chocolate chips
1 cup brown sugar
1/3 cup oil
2 eggs
1 teaspoon vanilla
1 cup flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup walnut, chop
1/2 cup confectioner's sugar

Melt chocolate. Combine with sugar and oil, add eggs one at a time, beat well, add vanilla. Combine flour, baking powder, and salt. Add to chocolate mix. Stir in nuts. Chill dough, Drop by rounded teaspoon in powdered sugar. Roll to coat place on greased cookie sheet. Bake.
Bake 350 10 to 12 minutes

1/2 cup shortening
1 2/3 cups sugar
1 teaspoon vanilla
2 eggs
1/4 cup cocoa
2 cups flour
2 teaspoons baking powder

1/2 cup walnuts, chop

Cream together shortening, sugar, vanilla, beat in egg and cocoa. Sift together flour, baking powder and salt, add to creamed mixture, alternating with milk. Add nuts. Chill 3 hours. Make into balls and roll in confectioner's sugar. Drop by rounded teaspoon.
Bake 350 - 15 minutes

Chocolate Fruit Bars

3 dozen

3 eggs
1 cup sugar
1/2 teaspoon almond extract
1 1/4 cups flour
1 1/2 teaspoons baking powder
1 teaspoon salt
1 cup semisweet chocolate chip
1 cup dates
OR
1 cup raisins
1/2 cup maraschino cherries
1 cup walnut

Beat egg, add sugar, add extract. Mix dry ingredients, add fruits and nuts. Spread dough in greased 13X9X2. Bake, may frost. Cut into diamonds or bars.
Bake 350 30 minutes

Chocolate Oatmeal Cookies

5 dozen

1 1/2 cups shortening
2 teaspoons vanilla
2 cups brown sugar
4 eggs
2 cups flour
2 teaspoons baking powder
1 teaspoon salt
2/3 cup milk
6 cups oatmeal
2 cups chocolate chips
2 cups walnuts, chop

Cream shortening, sugar and vanilla, add egg 1 at a time, blending well. Add flour and baking powder, alternating with milk. Stir in oatmeal, melted chocolate and add with walnuts. Drop by rounded teaspoon on greased pan
Bake 375 - 12 - 15 minutes

Chocolate Peanut Chip Cookies

4 dozen

1 cup shortening
2 cups sugar
3 tablespoons cocoa, heap
1/4 teaspoon salt
3 tablespoons cream
2 eggs
3 1/2 cups flour
1 teaspoon baking soda
2 cups peanut butter chips
sugar
cinnamon

Cream shortening, sugar and eggs. Mix dry indigents and blend all but sugar and cinnamon, chill. Roll into balls and then into sugar and cinnamon, flatten and bake.
Bake 375 - 12 minutes

Christmas Tree Cookies

1 servings

3/4 cup butter
1 1/4 cups light brown sugar
1 1/2 teaspoons vanilla extract
1 teaspoon lemon juice
2 eggs
3 cups flour
2 teaspoons baking powder
1/2 teaspoon salt

Cream butter, sugar, and beat until light and fluffy. Add vanilla, lemon juice, and eggs one at a time beating well after each addition. Sift dry ingredients and add to creamed mixture. Chill. Roll out dough into 1/8" thickness Cut into medium and small trees. Bake until edges are lightly browned. Cool frost and decorate.
Bake 400 5 minute

Cocoa Bars

1 servings

1/2 cup shortening
1 cup sugar
1 egg
1 teaspoon vanilla
3/4 cup buttermilk
1 1/2 cups flour
1/2 teaspoon salt

Cream shortening, sugar, eggs and vanilla, add buttermilk. Sift together dry ingredients and add. Grease and floured 13x9x2 pan. Spread into pan and bake.

Coconut Scotch Squares

1/2 cup butter
2 cups brown sugar
2 eggs, beaten
1 teaspoon vanilla
1 1/2 cups flour
2 teaspoons baking powder

Cream sugar, Butter, eggs and vanilla. Sift flour & baking powder. Blend in. Stir in nuts & Coconut. Spread in 13X9X2 pan Bake, cool in pan 10 minute remove & cut into Squares Roll in Confectioner's sugar.

Colored-Sugar Christmas Trees

1 servings

4 tablespoons shortening
1 1/2 cups sugar
3 eggs, separate
1 tablespoon lemon juice
2 1/3 cups flour
2 1/2 teaspoons baking powder
1 1/4 teaspoons cinnamon
1/4 teaspoon salt
1/4 teaspoon nutmeg
1/2 cup walnuts, ground
sugar

Cream shortening & sugar, add egg yolk. Beat well mix 2 egg White with Lemon Juice Alternately mix dry ingredients Alternately end with nuts. Roll 1/8" thick, brush with egg White, sprinkle with sugar and bake
Bake 375 6 - 8 minutes

Cream Cheese Cookies

Makes almost 3 dozen cookies

1/4 cup butter
1 8 ounce cream cheese
1 egg yolk
1/4 teaspoon vanilla
1 package Cake mix

Cream butter and cream cheese, add remaining ingredients, all but cake mix, add dry cake mix a 1/3 at a time and blend well. Add last 1/3 by hand, chill 1/2 hour. Drop by rounded teaspoon.
Cake mix suggestions:
Strawberry + 1/4t Strawberry extract
Lemon + 1/4t Lemon extract
Chocolate
Pineapple
Raspberry
Bake 375 8-10 minutes

Cream Cheese Marble Brownies

12 servings

2 3 oz. packages cream cheese
5 tablespoons butter
1/3 cup sugar
2 eggs
2 tablespoons flour
3/4 teaspoon vanilla
1 Family size Brownie Mix

Cream first 6 ingredients until smooth & Set aside. Prepare Brownie mix as directed on package. Spread 1/2 batter in 13X9X2 pan. Spread Cream Cheese mix over batter. Drop remaining batter by spoonfuls spread as well as possible. Cut through with knife for Marble effect.
Bake 350 35 - 40 minutes

French Lace Cookies

3 dozen

1/2 cup Karo syrup
1/2 cup shortening
2/3 cup brown sugar
1 cup flour
1 cup nuts, chop

Bring to a boil over low heat syrup, shortening and sugar. Remove from heat and add remaining ingredients. Drop by teaspoon 3" apart and bake. While still warm roll in cylindrical shape over wooden spoon handle. There is a magic moment, when cool enough to roll, yet not so cool that they break.
Bake 375 5 to 6 minute

Ginger Creams

3 dozen

3/4 cup shortening
1 cup sugar
1 egg
1/4 cup molasses
2 1/4 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon

mix in given order. Chill overnight. Shape into balls and roll in sugar. Place 2 1/2 " apart.
Bake 375 12 minutes

Gloria's Sugar Cookies

3 dozen

1/2 cup butter
1 cup sugar
1 egg, beaten
2 tablespoons evaporated milk
1/2 teaspoon vanilla
1/2 teaspoon salt
2 tablespoons baking powder
1 3/4 cups flour

Cream butter, sugar, egg, milk and vanilla. Mix dry ingredients and add, chill. Roll to 1/8" thin cut with decorative cutter.
Bake 375 10 minutes

1 cup shortening
1 cup brown sugar
1/2 cup granulated sugar
2 eggs
2 teaspoons vanilla
1 teaspoon salt

1 cup walnut, chopped

 

Cream together first 5 ingredients. Blend in remaining ingredients. Drop by rounded teaspoon.

Mabel's Chocolate Drop Cookies

3 dozen

8 tablespoons cocoa
1/2 cup shortening
1 cup brown sugar
1 egg
2 cups flour
1/2 teaspoon baking soda
3/4 cup milk
pinch salt
1/2 teaspoon vanilla

Cream cocoa, shortening, sugar, egg and vanilla. Mix in remaining ingredients for cake - like cookies. Drop by rounded teaspoon.
Bake 350 10 - 12 minutes

Plantation Fruit Bars

2 dozen

1/4 cup shortening
1/2 cup sugar
1 egg
1/2 cup molasses
1/2 cup milk
2 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
1 1/2 cups raisins
OR
1 1/2 cups dates
1 cup nuts, chopped

Cream first 4 ingredients, add milk. Mix dry ingredients and add. Stir in raisins or dates and nuts. Spread into a greased 13x9x2 bake. Frost with plain frosting, cut into diagonals or bars.
Bake 350 25 - 30 minutes

Pumpkin Bars

3 dozen

2 cups sugar
4 eggs
1 1/2 cups oil
1 1/2 cups pumpkin
2 cups flour
1 teaspoon salt
2 teaspoons cinnamon
1 teaspoon baking soda
1 1/2 teaspoons vanilla

Mix sugar, eggs, oil and pumpkin. Add remaining ingredients, pour onto a greased and floured cookie sheet and bake. Cool and frost. Top with images/rcpcardPumpkin Bar Frosting
Can use Persimmons in place of pumpkin.
Bake 350 F 30 minutes

Rolled Oatmeal Cookies

4 dozen

2 1/2 cups flour
1/2 cup sugar
1 teaspoon salt
1/4 teaspoon baking soda
3/4 cup brown sugar
2 eggs
1 teaspoon vanilla
3/4 cup shortening
2 cups rolled oats
confectioners' sugar

Sift together flour, sugar, salt and soda. Add brown sugar, eggs and vanilla. Mix well. Cut in shortening and oats. Sprinkle board with confectioners sugar. Roll dough to slightly less than 1/4" and cut. Bake in moderate oven.
Bake 350 10-12 minutes

Rolled Oats Cookies

1 serving

1 cup shortening
2 cups brown sugar
2 eggs
1 cup milk
3 cups rolled oats
1 pound raisins
1 cup nuts, chopped
3 cups flour
1 teaspoon salt

1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon cloves

Cream first 4 ingredients, mix dried ingredients, and add to creamed mixture. Add raisin and nuts. Drop by rounded teaspoon. Bake 375 15 minute

Rocky Road Fudge Bars

2 dozen


1/2 cup butter
1 piece unsweetened chocolate, square
1 cup sugar
1 cup flour
1 cup nuts
1 teaspoon baking powder
1 teaspoon vanilla
2 eggs
Filling
6 ounces cream cheese
2 tablespoons flour
1/4 cup butter, soft
1/4 cup nuts, chopped
1/2 cup sugar
1 egg
1/2 teaspoon vanilla
1 cup semisweet chocolate chips
2 cups miniature marshmallows
Frosting
1/2 cup butter
2 ounces cream cheese
1 square unsweetened chocolate
1/4 cup milk
1 teaspoon vanilla
1 pound confectioners sugar

In a large saucepan, over low heat, melt 1/2 cup butter and 1 ounce chocolate. Add remaining bar ingredients and mix well, spread into greased 13x9x2 pan.
Filling: In a small bowl combine cheese, sugar, flour, butter, egg and vanilla. Beat until smooth, creamy, and fluffy. Stir in nuts and spread over chocolate mixture. Sprinkle with chocolate pieces.
Bake 350F for 25 - 34 minute or until toothpick comes out clean.
Sprinkle with 2 cup mini marshmallows and bake 2 minutes longer.
Mix together 4 Frosting ingredients over low heat, melting together until smooth and creamy. Add confectioners sugar and vanilla. Blend well, swirl Frosting over marshmallows immediately after removing from oven. Cool, cut into bars.
Bake 350 25 - 35 minute, see instructions for when to return to oven for two minutes

Snickerdoodles

Makes 4 dozen


1 cup shortening
1 1/2 cups granulated sugar
2 eggs
2 3/4 cups flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1/4 teaspoon salt
2 tablespoons granulated sugar
2 teaspoons cinnamon

Mix all ingredients, but 2 tablespoons sugar and cinnamon. Roll in to balls the size of walnuts, then roll in cinnamon and sugar. Bake.
Bake 400 8-10 minute

Sugar Cookies

4 dozen


8 cups flour
2 1/2 cups sugar
1 cup butter
3 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
4 eggs
milk, very little

Mix flour, sugar, and butter as you would for Pie Dough. Add remaining ingredients roll out and cut with decorative cutters.
Bake 375 10 minutes.

Sugar Cookies # 1

3 dozen

1 cup sugar
1/2 pound margarine
1 teaspoon vanilla
2 eggs, beaten
1/2 teaspoon baking soda
1/2 teaspoon salt
3 cups flour
sugar

Mix sugar, shortening and vanilla, add eggs, blending well. Add remaining ingredients. Roll into balls size of egg. Roll in sugar and flatten with fork
Bake 375 - 10 minute

Springerle

3 dozen

4 egg whites, beaten stiff
4 egg yolks
2 cups sugar
1 cube ammonium carbonate
20 drops oil of anise
1 teaspoon lemon rind, grated
4 cups flour
butter
anise seeds

Beat whites stiff. Beat yolks and sugar and add whites. Blend in next 3 ingredients. Add flour. Blend well. Chill, roll out 1/4" thick; Cut place on floured board and cover. Let stand over night. Brush bottom only with cold water. On a Buttered cookie sheet, covered with anise seeds, place cookies on sheet and bake.
Bake 275F about 40 minute
Store tightly covered.

Date Ice Box Cookies

Makes 3 1/2 dozen cookies

1 cup shortening
2 cups brown sugar
2 eggs
1 teaspoon vanilla
3 1/2 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 cup nuts
1 cup dates
Cream shortening, sugar, eggs and vanilla. Sift dry ingredients together and add to creamed mixture. Divide into two parts and form into rolls 2" in diameter. Wrap in wax paper, refrigerate overnight. Slice thin and bake on ungreased sheet.
Bake 350 8 - 10 minutes.

Lemon Bars Deluxe

Makes about 2 dozen

2 cups flour
1/2 cup confectioners' sugar
1 cup butter
4 eggs
2 cups sugar
1/3 cup lemon juice
1/4 cup flour
1 teaspoon lemon peel
1/2 teaspoon baking powder
confectioners' sugar

Sift flour and confectioner's sugar, cut in butter. Press in 13x9x2 baking pan and bake until brown on edges only.
Bake 350 - 18 minute
Beat together remaining ingredients, pour over baked crust.
Bake 350 20 minutes.
Sprinkle with confectioner's sugar. Cool completely, cut into bars. Store in tight can in cool place.

Peanut Butter Cookies

Makes 4 dozen

1 cup granulated sugar
1 cup brown sugar
1 cup shortening
1 cup peanut butter
2 eggs
1 teaspoon baking soda
3 cups flour
1 teaspoon vanilla

Mix in order, adding vanilla with eggs. Drop by rounded teaspoon, and flatten with floured fork.
Bake 375 - 10 minutes.

Makes 4 dozen


1 cup shortening
3/4 cup granulated sugar
3/4 cup brown sugar
2 eggs
1 teaspoon baking soda
1 teaspoon salt
2 1/4 cups flour
1/2 teaspoon water, hot
1 cup walnut, chop
2 cups chocolate chips
1 teaspoon vanilla

Cream first three ingredients, adding beaten eggs, and vanilla. Mix and add dry ingredients. Add nuts and chips. Drop by rounded teaspoon.
Bake 375 10-12 minute
